Fresh. I trim ends & loose leaves. Halve. Toss with EVOO, garlic. Roast, 450. Make sure you don't cramp them of they will steam. I salt & pepper after, depending on desired taste.

fresh! they get that crispy char on the outside.
the frozen ones are hard to get cooked all the way in the middle without things getting mushy on the outside.

thank you. I was just going to post this exact question & then also ask when the recipe calls for roasting brussel sprouts does that really mean bake? or is it broil?
