If you make your own sauce..

Which brand of canned tomato do you use?

I use Pomi strained tomato and it comes in a carton. It comes out good but looking for other recommendations. Thanks!

We use either San marzano or muir glen
Whole peeled tomatoes sometimes crises added it. We use our Emerson hand blender after they are soft

I really like the Tutorossa whole peeled tomatoes. Those are my favorite. I buy their brand of paste too.

My mom uses Contadina tomato paste. I really love her sauce but it never comes out like hers!

I'll use any san marzanos that are D.O.P. I usually buy whichever one is on sale or cheapest since they can be a bit pricey.

Tuttarosso the green can or blue can crushed tomatoes. I sometimes add a puree for thickness.

Same here.. Usually 2 cans of crushed and one of whole that I break up with my hands first..

DOP stands for Denominazione di Origine Protetta. It means that it comes from the region that San Marzano is known for, in this case a small town near Naples called San Marzano (*I think). It's like getting balsamic from Modena-- the traditional place balsamic comes from or 100% Florida orange juice.

The DOP San Marzano tomatoes are grown in a volcanic soil (Mt. Vesuvius) and that does influence the taste. The DOP tomatoes will have a different taste from the North American San Marzano. The DOP tomatoes will be 'watery' because the tomatoes in the US are treated with calcium chloride and they don't quite 'melt'. ETA: I buy Mutti brand San Marzano DOP as that's the best brand I have yet to find here.
