If you make your pancakes from scratch, please tell me what I'm doing WRONG
So, I've tried making pancakes from scratch 3 times. I used the Joy of Cookiing recipe. They taste great and DH asked me never to go back to Aunt Jemima BUT, my pancakes are flat as can be. Not at all fluffy and light like I'm used to when I used a box mix. What am I doing wrong?

make sure you are using 1 amd 3/4 TABLESPOONS of baking powder. that is what makes it rise. I realized I was doing one table spoon but doing 3/4 of a teaspoon but it's not. usually I just eyeball the tablespoon measure for the 3/4's. I hope this makes sense.
and make sure you let the batter sit for a few minutes before you start cooking.
I use that recipe too. every weekend. the best pancakes EVER.
the other thing, if you are not doing it already, is mix the dry ingredients and the wet ingredients separately before combing them, so you only need a few swift strokes to get the final product.

Ah Ha!!! My recipe says 1 1/2 teaspoons. No wonder I have flat pancakes! Thank you, thank you! My DS and DH thank you too.
I got my recipe off the web. I'm going to look it up again since it seems the one I have may be off a bit.

seperate your egg whites and beat them until soft peaks form, then fold them into the batter at the last minute .... it gives them a lot of airy fluff

this is from memory so if someone sees a mistake, please correct me
dry ingredients
1 and one half cups all purpose flour 1 and 3/4 TABLESPOONS baking powder 3 tablespoons sugar 1 teaspoon salt
wet ingredients
1 and one half cups milk 2 eggs 3 tablespoons butter melted vanilla extract optional (I do a nice cap ful)
I combine all dry ingredients in a large bowl with a whisk until well incorporated.
I comibine all wet ingredients in a separate bowl, first whisking the milk and eggs and then adding the melted butter (to let it cool slightly) and the vanilla.
I then pour the wet ingredients into the dry ingredients and whisk together until incorporated...maybe about 10 or sir stirs.
and that is IT.

My pancakes come out pretty good but I tried this tip today and they came out even BETTER. Thanks!!!
