in a dinner rut, need easy and quick maybe 1 dish meals! help!
I love to cook, but in the summer I hate to cook. I am in a dinner rut and have no idea what to make tonight that is easy and quick, maybe 1 skillet or cassarole ideas or whatever you recommend would be helpful and if is a receipe, can you please post the receipe. TIA! So far this week we have had- turkey burgers meatball heros steak
I know I can do take out, but I try not too.

Grilled chicken breasts- marinated in balsamic, evoo, garlic, salt, and pepper.
I bbq them, and slice the chicken thin. Serve on Tuscan rolls with fresh mozz, and roasted peppers.
You can make a salad to go along with it, steamed green beans tossed in a little evoo, salt, and balsamic, or tomato salad.

Chicken curry sandwiches. Mix mayo, honey, curry powder, cashews, radicchio, and grated ginger. Add shredded roasted chicken. Serve on Ciabbata

in the summer, I try to keep it cold, easy and fresh.
the above posted sandwich recipes sound great...served with maybe a nice fruit or green salad.
I make A LOT of different salads in the summer....some a PITA, some easy.
do you eat fish at at? I LOVE seafood, especially in the summer.
I make salad nicoise (now since I am pg I use salmon steak instead of tuna) which is so simple and delicious.
mixed greens or your fav lettuce grape tomatoes hard boiled eggs (usually allot for half an egg per person served) chilled boiled potatoes (red, fingerling..your choice) chilled par boiled trimmed fresh green beans (haricots verts) nicoise olives
for our family of 3 (dh, MIL, myself) I usually make about a 1lb salmon filet. I grill in on a hot grill, skin side down FIRST after slathering in olive oil, kosher/sea salt and freshly ground black pepper. in the last seconds on cooking on the flip side, I squeeze a nice hunk of lemon right on the hot grill.
for the dressing, I take the juice of one lemon, a nice drizzle of honey, and extra virgin olive oil, mix that up with salt and pepper.
I arrange the salad in layers on a flat platter...lettuce at the bottom with the other ingredients kind of in piles on the sides. I place the freshly cooked fish in the center of the platter and drizzle the dressing all over the top.
it's delicious and really pretty fast.
sometimes I will cook the potatoes and eggs in the morning before work allowing them a longer chilling time...but you could speend it up by removing once cooked and putting in an ice bath until they are cool enough to slice (and peel in the case of the eggs) I use the same water to par boil the green beans, so it's essentially a one pot, one pan dish.

This is so simple. I make it about 2-3 times a month because DH enjoys it...and it gives me dinner for 2 days
Boil about a cup and a half of pasta (I use rigatoni) until aldente.
In a pan heat EVOO & add ground beef. Cook until half way pink. Add one onion choped & 1 garlic clove chopped. You can seasoning meat with what you like (red pepper flakes, garlic powder etc..)
Cook until meat is light pink in some areas...mostly cooked
In a large mixing bowl, combine pasta & meat mixture.
Add about cup of tomato sauce (I usually use a 14 oz can of store bought sauce).
A cup and a half of shredded cheese (I like monterary jack)
Grated parmesan cheese, pepper and salt for seasoning.
Toss everything until nicely mixed. Pour into a buttered glass dish.
Mix 1/2 cup of bread crumbs with some more parmesan cheese & sprinkle on top (DH likes the crunch so I tend to cover the top with bread crumbs).
Place a few pieces of butter on top.
Bake in over for 25-30 mins @ 375. Sometimes I will cover with aluminum foil half way through - to prevent top layer of pasta from getting crunchy.
