In such a recipe rut!
Help me!
I make a lot of roasts (pork, chicken, pot roast) because they are fairly healthy when paired with the right sides and they are easy for me.
But, I am bored.
What are some of your go-to dinners that don't have one million ingredients?

I try to do a lot of one pot meals and things you can prepare and stick in the oven. This week I made the white turkey chilli from skinnytaste and it was so good! I halved the recipe, but wished I hadn't. It would have been nice to have leftovers for another night. Recipe

Chicken Soup Baby Back Ribs (I buy Lloyds at BJs) and make some sides Pasta w/ sauce and meatballs I make and freeze so I can quickly grab. Calzones- w/ sausage, broccoli, cheese..or really anything you want to stuff in them stuffed peppers in the crockpot chicken, steak, or burgers on the grill...with a few sides, corn, baked beans, fries..

I do a lot of variations of chicken breasts: fried, grilled, topped/stuffed with veggies and cheese.
Burgers Tacos Quesadillas Fajitas Meatloaf Stir-fry (chicken or shrimp) Sloppy Joes Angel hair with oil and garlic

meatballs are really easy to make and cook and you can use any meat (chicken, turkey, beef, lamb, a mixture which most people love) so that you aren't having the same protein always.
You can then serve it over pasta or for healthier options, alone with different healthy sides like vegetables, I even sometimes serve it over a salad.
I also do a lot of different chicken breasts/tenderloins that I season in different ways and then top with different things, like olive-tomato-basil, or with a mushroom gravy.
The healthiest easiest meals come during summertime when we can grill a lot more. Burgers, Chicken and Veggie Kabobs, etc.

My really easy and healthy go to dinners are:
Skinnytaste Pasta and Broccoli - This one is so simple.
Italian Turkey Meatballs
Even though it's technically a weight watchers recipe this quiche is so delicious.Broccoli Cheddar Quiche
I will also do simple paninis. I can make baked ziti ahead of time for later in the week, and other casseroles (mac and cheese) that I can either freeze or use as leftovers later in the week.
Skinnytaste also has a lot of stuffed chicken breast recipes which are SO good and pretty easy. Most don't require a lot of ingredients, and can be put together pretty quick. I pair those will a side salad or some rice.
Also, we still use our grill even in the winter. Sometimes I just make a simple marinade and let the meat marinate while I'm at work.

I've been enjoying Bon Appetit recipes lately. I liked them on Facebook and I get so many new ideas on my feed and they are pretty easy recipes, too.
