MY MIL gave me this one, and the family loves it:
1 3/4 cups sifted flour 2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt 1/3 cup shortening 2/3 cups sugar 2 eggs, well beaten 3-4 mashed ripe bananas 1/4 nuts (optional)
Sift together flour,baking powder, baking soda and salt. Beat shortening until creamy in a mixing bowl. Add sugar gradually and continue beating until light and fluffly. Add eggs and beat well. Add flour mixture alternatively with bananas, a small amount at a time, beating after each addition until smooth.
Turn into a well-greased bread pan and bake in a preheated 350 degree oven about 1 hour or until bread is done.
Makes 1 loaf.

Don't forget... You can add chocolate chips to the Banana Bread recipe....Oh soooo good!!!!!

This recipe is awesome and makes a very moist banana bread:
Banana Banana Bread
INGREDIENTS:
* 2 cups all-purpose flour * 1 teaspoon baking soda * 1/4 teaspoon salt * 1/2 cup butter * 3/4 cup brown sugar * 2 eggs, beaten * 2 1/3 cups mashed overripe bananas
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. 2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. 3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack

Just wanted to add, the recipe I posted uses about 5 overripe bananas. If you want to make banana bread, but your bananas aren't overripe like they should be, take off the peel, place them in a plastic baggie and put them in them in the freezer for an hour or so. That speeds up the ripening process. One more thing, to mash the bananas I actually use a potato masher and it works like a charm

oh man my dad makes the best banana bread.. all his guests love it (owns a b&b lol) and usually ask to take some home. its a really simple recipe.. i think it was actually from like my home & careers class from jr. high. i'll have to copy it down this weekend and get it for you.
