italian deli cold sandwich suggestions...
Can you recommend a combo for me please?
Something with mozzarella and balsamic vinaigrette.
What would be delicious with those two ingredients? I prefer veggies. Something with eggplant maybe? Help!

sandwich wise,
breaded chicken cutlet, roasted red peppers, mozarella & balsamic vinegar ,, Yummy ,,, of course then u can add the eggplant , grilled would be nice

You can do a grilled veggie and fresh mozzarella with balsamic
thinly sliced prosciutto with fresh mozzarella and baby arugula

I slice eggplant SUPER thin, salt it so it cries, soak it in milk and then dip in egg and then breadcrumbs and fry it until crisp.
Put that on a Italian bread with a slice of Genoa salami, a little mozzarella, a few tomatoes, and a drizzle of balsamic vinaigrette made with fresh garlic and basil.
But my FAVORITE? I do the eggplant, provolone, hot cappy, prosciutto, and MUFFALETTA!!!!!!!! OMG. It's so friggin' decadent that I can't take it... but I looove it.
