It's a latin(in Texas) food too and it is used for the recipe, Menudo (soup with tripe and hominy, chili powder, a squeeze of lime and topped with onions served with corn tortillas on the side). I used to eat it when I was younger but knowing the fat content of it, I eat it sparingly now. In college, it was a cure for a hangover.

I am Irish..it was never part of my life..till I married a Puerto Rican..I will surprise him with it in soup sometimes..

he loves it...I can't watch him eat it.
