Italian Sausage and Peppers
Im curious how everyone makes this. I wanted to make a large amount for a BBQ and assumed I could bake it all, but from what I see online it seems that it needs to be cooked on the stove top.
Anyone have any good recipes to share?

I like to grill my sausage (but leave it a little undercooked-it will finish in the oven), then cut it up and put it in the pans with my peppers and onions. Drizzle with a little olive oil and sprinkle with spices. Let it bake until the onions and peppers are soft and the sausage is fully cooked.
I do not add tomato sauce but I know some people do. I guess you can add the tomato sauce when you are getting ready to bake the dish.
Yummmmmmmm...now I want some sausage and peppers!!

I like to do it on the BBQ in the summer- its so much cleaner and easier.
FOr about 6-8 people, Id get about 12 red bell peppers & a large spanish onion,
slice in thin strips and throw in a 13X9 or larger aluminum tin, smash about 5 garlic cloves & add, then drizzle about 1/4-1/2 cup of EVOO...s,p,garlic powder, you can cut up some potatoes & add if you want to stretch it out for more people- also if you'd like, you can add some tomato sauce or paste&water for color.
Mix all together, cover with tin foil and cook on the BBQ till soft& cooked,
At the same time put about 2 1/2 lbs of hot& sweet sausage on the grill, when finished cut up & add the the onion/pepper mix- cook w/o cover for another 10-15 mins.

I make sausage and peppers all of the time. This is how I do it:
I put an entire sausage roll (the non linked or linked sausages all in one large roll of say 10 links or link lengths) in a very large pan with 2 cups of water. I then put the cut peppers and onions on the sausage and cover the pan with my wok cover.
I steam the sausage for 30 minutes replacing the water as nessisary, DO NOT let it go dry.
I then check the peppers and onions for tendereness, should be moist and soft.
If all is good, I take the peppers and onions and transfer them to a smaller sauce pan and move the sausage to the grill for a final browning.
Keep the peppers and onions warm on the grill.
Place on a sausage roll from the supermarket, near the deli counter, cover with peppers and onioins and enjoy.........
Easy and Great......

I start at least a day before....
Marinade the Sausage in Olive Oil, White Wine and a few spices.
Marinade the onions and peppers in Olive Oil, Balsamic Vinegar, a little sugar and some other spices.
Marinade overnight mixing regularly.
Sausages on the grill and then peppers in a pan.
This is off the cuff. if you'd like the actual recipe, FM me and I'll get off the couch to get it.

My mom always does it in the oven....you just need to brown the sausage first..either grill it, use frying pan method, or put in the broiler (I slightly under cook it because it will cook in the oven too)....then cut up peppers and onions and then slice sausage....throw all into a aluminum foil baking pan...drizzle olive oil over and sprinkle with garlic powder, pepper and salt. Mix it all up, cover with foil and bake until peppers and onions are done....very easy and yummy! Enjoy!

I boil the sausage 1st for a few minutes then grill them
then make peppers and onions in a pan with a lil bit of EVOO

I used the Pinwheel Sausage. If its summer time , i bbq it, if its winter i fry it with evvo..
After that is cooked, I fry up a large thin sliced onion, fry that with , Id say about 5- 6 garlic cloves ( sliced very thin) , After the onion is transulent & the peppers have softened. I add the sausage to the pan, wsith some oregano & s&p. Usually that depends ob the kind of sausage i get . Then I Continue to cook on low .. & Thats That ,

In the summer I like to make it on the grill.....but in the winter or if I am making it for a big party I make it on the oven. Soooo easy.
Put the sausages in the bottom of a big pan (like a lasagna pan). Cover with sliced onions and peppers (you need a lot because they shrink down. Bake for about 1 - 1 1/2 hours. Take out the sausage and cut it up. Put back in and bake til sausage cooked through.
If you like it with red sauce (my Mom does) I put one small can of tomato sauce on top when I first start and it mixes with the liquid from the peppers and onions.
If you like it without that I drizzle olive oil over the peppers/onions and sprinkle with a bit of italian seasoning.

I fry the sausage until half cooked. Then take them out and add onions and peppers to the pan and saute until peppers are soft. Then I throw it in a pan and bake until sausage are done. About 15-20 mins.

Here's a recipe my friend submitted for our faculty cookbook- can't wait to try it!
Street Fair Italian Sausage and Peppers
2 tbsp. olive oil 12 hot or sweet sausages 1 medium onion, sliced thin 1 small clove garlic, minced 2 red peppers, seeded and sliced 1 green peper, seeded and sliced 3 tbsp. tomato paste 3/4 c. white wine salt and pepper
In a large skillet, heat oil and fry sausages on all sides until browned. Drain off excess fat and add the onions, garlic, peppers, tomato paste, wine, salt and pepper. Cover and cook on low heat for 20 minutes or until peppers and onion are tender. Serve as a main meal with a pasta side dish or on Italian bread as a sandwich.
