anyone know of a kosher for Passover cheesecake recipe? specifically the bottom crust - I can't use graham crackers like I always do.

Passover recipe for anything:
Put anything in a pot and boil it. If you want flavor (as if Passover food EVER tastes good) add salt.
DONE!

I'm going to try to Pesach-ify this recipe by taking out the garbanzos (and peas? can we eat peas?), and using quinoa instead of cous-cous.
Veggie Burgers (I haven't tried these yet)
Other Passover recipes
I have more at home, I'll post them when I get a chance.

Baked Stuffed Zucchini Source: Zahava Koren at http://euler.ecs.umass.edu/pass-veg/#Zucchini
2 zucchinis, cut in half lengthwise 1 small onion, finely chopped 4 Tbsp. tomato sauce 1/2 tsp. parsley 1 clove garlic, chopped 2 Tbsp. matzo meal
1. Scoop out the pulp of the zucchini halves. Heat the pulp, onion, tomato sauce, parsley, and garlic in a pan for 5 minutes. Add the matzo meal to the mixture and mix well.
2. Restuff the zucchini with the mixture. Place in a baking dish with a little water on the bottom.
3. Bake at 450 °F for 30 minutes until the zucchini shells are soft.
Makes 4 to 6 servings

Mediterranean Chopped Salad
For the Vegetables: 1 yellow squash, cut into 1/4-inch-thick strips 1 zucchini, cut into 1/4-inch-thick strips 1 Japanese eggplant, cut into 1/4-inch-thick strips 1 large red onion, cut into 1/4-inch-thick strips 2 roasted red bell peppers 1/4 cup black olives 1/4 cup sun-dried tomatoes
Brush the squash, zucchini, eggplant, and red onion with olive oil and season with salt and pepper. Grill on both sides.
Cut the peppers and the remaining ingredients into small, even pieces and toss together in a large bowl. Refrigerate until chilled, then toss with Basil Vinaigrette and serve over baby arugula.
For the Basil Vinaigrette: 1 shallot 2 garlic cloves 1 cup red wine vinegar 4 Tbsp sugar 2 1/2 cups olive oil 1 cup basil 1/2 cup water Salt and pepper, to taste
Place the shallot, garlic, vinegar, and sugar in a blender and blend until smooth. With the blender running, add the olive oil in a slow drizzle. Add the basil and blend. Slowly pour in the water. Season with salt and pepper.

Quinoa Rice & Basil
1 cup quinoa 1 cup diced tomatoes 1 cup hot water (3/4 cup if using canned tomatoes) 1-2 garlic cloves, cut into thin slices 2 Tbsp fresh basil, or 1 tsp dried 3/4 tsp salt 1/4 tsp black pepper 1 Tbsp olive oil 1/2 teaspoon sugar
Heat oil, fry garlic until fragrant, add tomatoes, stir until hot
Add quinoa, basil, salt, sugar & water, bring to a boil
Reduce heat to minimum and cook covered until done

I just made something so incredibly easy from the NY Times Passover cookbook.
I am serving these instead of matzoh at the table-- I will have tam tam crackers for hor deurves though.
Passover Popovers
2 large egss (I used egg beaters) 1/4 cup of water or milk (I used skim milk) 2 tablespoons vegetable oil (I used olive oil) 1/2 teaspoon of salt 1/2 cup matzoh cake meal
Preheat oven to 450. Grease a standard muffin tin.
In a bowl, beat together eggs, milk , salt and oil. Add matzoh cake meal and stir with a fork until all is blended well.
Even distribute the mixture into each muffin tin. Makes 12.
Bake in the lower third of the oven for 30 mins or until nicely browned and firmed to the touch.
I didn't bake for the full 30 mins-- so, keep a watch on them. I tasted one as a taste test and they are quite good and a nice alternative to matzoh at the dinner table.

Matzah Lasagna Recipe
8 to 12 servings
Matza, enough to make four layers in a 13x9x2" baking dish, lightly moistened with water. Do not soak, wetting them as you layer them.
3 cups ricotta 24 oz. shredded mozzarella, divided 1 cup grated parmesan, divided 1/3 cup chopped fresh parsley 3 eggs, lightly beaten 4 cups your favorite spaghetti/tomato sauce
Mix ricotta, 5 cups of the mozzarella, 3/4 cup of the parmesan, parsley and eggs.
Spoon 1 cup of the spaghetti sauce on the bottom of the baking dish. Cover with one layer of moistened matzah. Layer 1/3 of the cheese mixture and 2/3 cup of the sauce in dish. Repeat layers twice. Cover with a final layer of moistened matzah, 1 cup of sauce, 1 cup of mozzarella and 1/4 cup parmesan.
Bake at 350°F for 45 minutes or until thoroughly heated. Let stand for 15 minutes before serving. Serve with additional sauce.
You can add grilled veggies if you like. layer half of the grilled vegetables on top of the first layer of cheese mixture and then cover with the 2/3 cup of the sauce and second layer of moistened matzah, then put the sautd spinach on top of the second layer of cheese, sauce, matzah, and then cheese, the rest of the grilled vegetables, sauce, and then the final layer of matzah, sauce, mozzarella, and parmesan.

just wanted to say that I made a Passover cheesecake for the Seder last night and it came out REALLY good! I used macaroon cumbs with 2/3 of a cup of melted butter to make the crust. YUMM!

Matzah Brei
Some people prefer softer matzah brei, while others like it crunchier. For a softer version, use more boiling water.
SERVES 4
6 sheets of matzah
4 eggs
boiling water
salt and pepper to taste
In a large bowl, break matzah into fragments. Not too small! Sprinkle with a little boiling water to soften matzah (no more than 1/4 cup).
While matzah is softening, beat eggs. Pour over softened matzah, add salt and pepper to taste. Mix well.
Pour mixture into hot, oiled frying pan and cook over medium heat, stirring until matzah brei is dry but not crisp.
Serve with cinnamon and sugar, honey, or preserves (blackberry jam is particularly good). Matzah brei cools quickly. Can be reheated in the microwave.
