Just made some cookies -- low fat, low calorie, and yummy~
These are perfect for Valentine's day -- I put some red-hots on the batch that are in the oven now.... (from today's Newsday, Part II)
CHOCOLATE CINNAMON ANGEL KISSES
Heavenly puffs of chocolate - perfect with fruit, ice cream, cake or on their own. (And they're fat-free and low in calories, too).
3 large egg whites
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1/2 teaspoon vanilla extract
3/4 cup sugar
1/2 teaspoon ground cinnamon
2 tablespoons cocoa powder
1. Preheat oven to 250 degrees. Line 2 cookie sheets with parchment paper.
2. Combine the egg whites, cream of tartar, salt and vanilla extract in the bowl of an eclectic mixer and whip on medium until the egg whites hold soft peaks, 3 to 4 minutes.
3. Combine the sugar, cinnamon and cocoa. With the machine running on high, slowly add the sugar mixture into the eggs whites in a steady stream. Beat until the meringue is glossy and holds stiff peaks.
4. Scoop the meringue mixture into a large plastic bag and cut off 1/4-inch of one corner. Squeeze the meringue through the cut corner to form "kisses" on the parchment paper. (They don't spread.)
5. Bake 45 minutes. Cool completely. Makes about 30 cookies.
Nutritional analysis for each cookie: 23 calories, 0 protein, 5 g carbohydrates, 0 fiber, 0 fat, 0 saturated fat, 0 cholesterol, 15 mg sodium

Sounds yummy!! I make somehing similar without the cinnamon and cocoa but with choc chips :)
