Latke recipe?
My mom is holding my favorite recipe book hostage, and I want to make latkes this weekend. Does anyone have a recipe??

this is my mom's "recipe":
I don't have a specific "recipe". I just make them. I use the food processor, 3 large potatoes, 1 onion, 1 egg, can use flour or matzo meal, salt and pepper. Process only until all pass through the blades, I like them with larger pieces, if you want it finer, process again. you can also hand grate--, can be bloody - but delicious!!! Fry in hot canola oil, brown on both sides, drain on paper towels, have with applesauce or sour cream

i havent had these, but i got this healthy recipe yesterday from hungrygirl.com (it's like weight watchers)
A Whole Latke Love!
Ingredients: 3 cups shredded butternut squash (a cheese grater works well) 1/2 cup shredded onion 1/4 cup fat-free liquid egg substitute (like Egg Beaters Original) 2 tbsp. whole-wheat flour 1/2 tsp. salt olive oil nonstick cooking spray Optional Toppings: fat-free sour cream and chopped scallions, unsweetened applesauce and cinnamon
Directions: Place a large baking sheet in the oven, and preheat oven to 450 degrees.
Place shredded squash and onion on a layer of paper towels. Cover with another layer of paper towels, and press down firmly to remove all excess moisture. Repeat until squash and onion shreds are as dry as possible. < BR>In a large mixing bowl, combine squash, onion, egg substitute, flour, and salt. Mix well.
Using oven mitts or kitchen towels, carefully remove the hot baking sheet from the oven. Cover sheet evenly with a 3-second spray of olive oil spray.
Spoon squash mixture onto the sheet in 12 evenly spaced mounds. Using the back of a spoon, flatten and spread each mound into a circle about 3 inches wide.
Carefully (remember, it's hot!) return pan to the oven and bake for 8 minutes.
Using oven mitts or kitchen towels, carefully remove sheet. Coat the top of the latkes with another 3-second spray of olive oil spray. Gently flip with a spatula.
Return to the oven and bake for approximately 10 minutes, until both sides of latkes are crispy. Serve with sour cream topped with scallions and/or applesauce topped with cinnamon!

I didn't post because I hadn't tried this yet but this is the recipe I will be trying:
Ingredients
* 8 medium potatoes, peeled * 1 medium onion * Lemon juice * 1 cup flour * 1 cup milk * 1 egg * 1 tablespoon baking powder * 1/8 cup melted butter * Freshly grated nutmeg * Salt and pepper to taste
Directions
Grate potatoes and onions on a large-hole grater. Splash with lemon juice and squeeze out excess water.
Mix flour, milk, egg, baking powder, and nutmeg. Add to the potatoes and then add the melted butter.
Heat some peanut oil in a skillet and fry until golden on one side. Flip, and cook the same way on the other.
