Lent Meals
We're big meat eaters over here...and I haven't done the "No meat" for Lent in a very, very long time. I found myself struggling to think of non-meat dishes for this Wednesday and Friday.
Anyone have any favorite recipes they'd like to share?

Baked ravioli Lasagne florentine Homemade veggie burgers Stuffed shells w/spinach Tacos w/soy crumbles Cheese enchiladas Spaghetti squash stuffed w/veggies and cheese Loaded baked potatoes w/meatless chili, etc Breakfast for dinner (casseroles, pancakes, omelettes) Veggie quiche Calzones

Tuna melts elbows and tuna shrimp with pasta scallops, flounder baked ziti lasagna rollups eggplant parm egg sandwiches

I've been trying to think of some ideas...especially since this week we can't have meat on Wed. OR Fri.
so far I have: Shrimp stirfry Shrimp scampi Teriyaki Salmon Baked Ziti Grilled cheese and tomato rotini soup pasta with sauce homemade pizza

Luckily there are only 8 meatless days!
We tend to do a lot of fish. This week we're doing a steamed flounder on Wednesday - it's not a day of abstinence - but it's still a mourning day so we try to do no fat or sugar.
Friday we'll do angel hair with sauteed squash, some fresh mozzarella and a red sauce. Garlic bread and salad round out the meal.
We also like: Pasta w/ peas Salmon with asian glaze Cod cakes w/ tartar sauce Fish chowder Cheese ravioli Pasta primavera Grilled Cheese and tomato soup Fish tacos Frittata or quiche with salad and fruit.

We usually end up doing a LOT of pasta and fish. Mostly the ideas the PPs have posted. It's not too many days, so it shouldn't be too hard.
