My new favorite:
Grilled Tilapia with Smoked Paprika
4 (6oz) tilapia fillets 1 1/2T olive oil 1 t smoked paprika 1/2 t garlic powder 1/2 t salt 1/4 t fresh grd black pepper
Heat lg non-stick grill pan over med-high heat. Combine oil, paprika, garlic,salt and pepper in bowl and mix well. Rub fish evenly with the mixture. Coat pan with cooking spray. Cook fish 4 min on each side(or until done!) Serve with polenta...yummmy!

Salmon filet, with lemon, sea salt, and olive oil. Then, I top it with sliced cherry tomatoes, olives, feta and oregano. Bake at 375. Even my kids eat this one.

This is really easy and something we do ofter...
White Fillet...Tilapia, Cat Fish, Base etc Canned diced tomatoes Minced Garlic Olive Oil Sea Salt
Pre heat over 400.Mix together tomatoes, Garlic, Olive Oil, and sea salt. Place serving size pieces of fillet on individual pieces of aluminum foil. Spoon tomatoe mixture on each fillet...fold up aluminum foil to form sealed packets. Place packets on a baking sheet and bake in over for about 20 minutes.
We serve with Couscous and a veggie.

I found this on Kraft website, it looks good
Baked Salmon with Tomatoes, Spinach & Mushrooms
4 salmon fillets (4 oz. each) 2 cups chopped fresh spinach 1 cup sliced mushrooms 1 medium tomato, chopped 1/3 cup KRAFT Sun-Dried Tomato
Dressing PLACE salmon fillets, skin sides down, in 13x9-inch baking dish sprayed with cooking spray.
MIX remaining ingredients until well blended; spoon over salmon.
BAKE at 375°F for 20 to 25 minutes or until salmon flakes easily when tested with fork.

cant beat shrimp scampi....butter and EVOO in a fry pan with lots and lots of pressed and minced garlic...toss in the shrimp...cook until done...serve over rice or pasta

2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme
I make this up (got it from the food tv website, it is Emeril's) and use it as a spice for fish. I really like it with salmon.

I like to add wine to this, some mrs. dash, fresh parsley and some lemon juice.
