Looking for a baked ziti recipe
without cheese, with meat. Does anyone have one?

i don't have a recipe, but it seems like you should be able to do this with breadcrumbs on top and a meatsauce in the middle with the ziti.
do you want to use tofu cheese?

Yes. I am staying away from dairy. We are kosher-esqe and don't mix meat and dairy.

i wasn't able to find any recipes but if it were me, i would just make a meat sauce and mix it in a casserole dish with cooked ziti. make a topping with 1/4 cup olive oil and 1 cup italian breadcrumbs and bake at 375 for about 10-15 minutes until the top is golden (it will bake for less time b/c you don't need to melt any cheese - or just pop it under your broiler.
ETA: i would also add a veggie like spinach to round out the dish, not sure if your family will like that though

I agree. you can just use the meat (if you want it to bind, don't use too much sauce; instead serve it on the side), and just layer your pasta and meat in the pan and then top it with breadcrumbs.
I like the spinach idea too. You can add zuccini too. YUM!

I made this "cheese" for lasagna I served to vegan friends and was really impressed.
1/2 tablespoon soy margarine 1 block silken tofu, thoroughly mashed 1/2 cup nutritional yeast 1/2 cup soy milk 3 tablespoon vegan mayonnaise 1 teaspoon paprika 1 teaspoon salt 3/4 teaspoon mixed seasoning such as spike or mrs. dash 1/2 teaspoon mustard powder
1) Melt margarine on stove on med. heat. 2) Add the mashed tofu, mix, turn up temp. 3) Add yeast, paprika, salt, mixed seasoning, mustard powder, mix. 4) Saute for 3-4 min. then add soymilk and mayo, lower temp and let simmer 5 min, stirring occasionally. 5) Turn off heat, set aside.

this is a good idea. i am willing to bet you can also mix a beaten egg into the sauce mixture before you mix it with the pasta and bake it to help it bind a little but i don't know what that will taste like.
