Looking for a good Baked Chicken or Roasted Chicken Recipe
Looking for a good Baked Chicken or Roasted Chicken Recipe....
Please post yours here. My mom used to make both roasted and baked chicken, but no one has her recipe......She made it so good.

Here is what I do ...
I wash and rinse chicken and place in a ziplock bag.
I take apple juice, crushed garlic and kosher salt, and thyme leaves and mix together until salt disolves. Pour over chicken and seal bag tightly and with as little air as possible. LEt sit overnight.
In the morning, I rinse the bird off and pat dry.
Dice up finely: onions, carrots, celery. Put inside the bird along with fresh springs of rosemary, sage and thyme (the fresh poultry herb mix at Stop & Shop)
Around the bird I place bigger pieces of onions, carrots, celerly, whole peeled garlic cloves (or any other root veggie you like - turnips, pasrnip, etc...)
Lift skin gently from breast ... rub butter underneath the skin, place a few Sage leaves under the skin. Ties the legs together and fasten the wings to the breasts (they sell metal pins for this)
Rub the outside of the breast with olive oil.
Sprinkle liberally with kosher salt, black pepper and garlic powder.
Bake for 20 minutes at 450.
Turn down the oven to 375 and bake until about 150 degrees. You may need to cover the chicken so the wings do not burn.
Turn the oven back up to 500 for the last 20 degrees to crisp up the skin (170 should be the final temp in the breast)
JUICY and sooo TASTY.

This is the BEST roast chicken recipe!!!
Sticky Chicken
2 teaspoons salt 1 teaspoon paprika 3/4 teaspoon cayenne pepper 1/2 teaspoon onion powder 1/2 teaspoon thyme 1/2 teaspoon white pepper 1/4 teaspoon garlic powder 1/4 teaspoon black pepper 1 whole roasting chicken, about 3 pounds 1 cup chopped onions Combine all spices (first 8 ingredients) in small bowl. Rinse chicken, inside and out. Drain well.
Rub spice mixture over skin and the inside of chicken.
Place in a resealable plastic bag, seal and refrigerate overnight.
When ready to roast, stuff cavity with onions.
Place chicken breast side down in roasting pan.
Roast uncovered at 250ºF (that's not a typo...it's really 250º! Anything over 225º is safe as long as the chicken reaches an internal temperature of at least 155º, which this does, and more) for about 5 hours. Baste occasionally with pan juices or until pan juices start to caramelize on bottom of pan and chicken is golden brown.
Serves 4.

I do something similar, but I use buttermilk instead of the apple juice. It acts like a tenderize for the meat.
For the cavity, I quarter a lemon, orange, onion and add fresh rosemary and sage.

I use my MIL recipe for making a roasted chicken w/ a lemon gravy....it's DH favorite!
Take 1 whole chicken (about 3 lbs but I use a bigger one). Wash and place on roasting rack in pan. In a large measuring cup (I use a 2 or a 4 cup one) fill most of the way with lemon juice. Then add water (if you like alot of zing, less water, less zing, more water). Add some olive oil, enough to float on top.
Pour over chicken. If you can, pour some into the cavity of the chicken. Sprinkle with salt & pepper. Slice whole cloves of garlic, as many as you like and place all over top of chicken. I usually throw some inside the chicken also.
That's it....bake at 350 for about 2 1/2 hrs (or until done--ours is longer because I use a bigger bird)

I have always just used hungarian paprika.....it has to be hungarian you can buy it in a little red tin at the grocery. Garlic salt, and pepper. Bake like you normally would and mashed potatoes on the side. YUMMY!!!!

This is a little different. It's a Chinese recipe.
My Mom's Soy Sauce Roasted Chicken
For a 2-3 pound whole chicken: -Salt the chicken all over with about 1 tsp salt, inside cavity, also. -In a bowl, combine and mix: - 2 tsp soy sauce - 1 tsp scotch whisky - 1 tsp black bean sauce - 1 tsp hoisin sauce - 1/2 tsp sugar - ground black pepper - chopped fresh ginger
-Brush marinade all over chicken; then pour the rest inside cavity. (If basting, reserve some.) -In cavity, place 2 whole scallions, chopped ginger, chopped garlic.
Updated temp/times: Roast in oven at 365 to start. When almost ready (about 55 minutes), raise temperature to 400 for 5 to 10 minutes til golden.
For a more moist chicken baste w/ marinade after 30 minutes, 1 to 2 times.
