I dump cans of beans into a bowl (after draining liquid). You can use whatever you like.. we usually do 3-4 different kinds - black, dark kidney, chick peas, pink beans.. whatever..

Chop up a big handful of dill to a nice mince and throw that in. Do a fine dice on a small to medium sized red onion and throw that in. Add some lemon juice, a little olive oil and then salt and fresh ground pepper to taste.

It's simple, clean and really tasty.

My MIL makes one with green beans and cubed potatoes. She tosses it with some white vinegar, salt and pepper. It's really yummy
