My Mom makes an amazing version of this... and it's really easy too!!!
Crustless Zucchini Quiche
4 eggs 3 c. sliced zucchini 1 c. Bisquick 1/2 c. Parmesan-Reggiano cheese mix 3/4 block Mozzerella (cubed) 1 med. onion (chopped) 1 garlic clove (chopped) 1/2 c. oil Salt and pepper
Beat eggs first then mix all together. Grease quiche dish. Bake at 350 degrees for about 40 minutes. Delicious hot or cold!

I usually use a square corningware type dish I have from Crate & Barrel. Looks something like this...

Awww - you have a nice Mom! I'm pretty sure they have them at Target for a good price! You should pick one up the next time you're there!

Quiche lorraine (quick and easy)
- Get frozen puffed pastry dough. Thaw and roll to fit in a 8 inch square/round dish - "poke" the dough with a fork on the bottom. - Put in oven for a few minutes.
- Cook "thick" bacon. Drain, and crumble - Cube some ham (I have the deli counter slice 1 slice VERY thick... like 1/2 inch). That way when you cut it, you can cut it in cube size - Slice small white mushrooms. Cook in pan and drain (mushrooms are optional). - In bowl, mix eggs, shredded cheese, bacon, ham.
Put mixture in dish (with partially cooked dough).
Put in oven
It's cooked when you put a tooth pick in center and it comes out clean. Takes about 35-45 minutes depending on your oven.
Serve a slide over a bed of lettuce.
