looking for easy appetizer
Anyone have a quick easy recipe for appetizers? I don't like too many vegetables, and I absolutely DETEST tomatoes. TIA.

what kind of appetizers? Heres a few I make... pigs in blankets (buy the crossaint rolls and roll them with hotdogs...cut into small peices prior to cooking). salmon on crackers (buy salmon spread and smear on cracker then put a small piece of lox on top) You can also cut up pumpernickel bread and make spinach dip

Roasted Asparagus sprinkled with garlic powder and EVOO in the broiler, then a sprinkle of balsamic vinegar when it comes out.
Couscous with chopped artichokes, peppers, (tomatoesfor you), lemon juice. You can put whatever vegetable does it for ya!
Steamed anything in the microwave.
DH and I LOVE the premade salad in a bags, you just toss together the salad dressing and whatever else comes with it.

I make Raspberry Brie Cups that are yummy and can't be any easier.
Buy the premade phyllo dough cups in the freezer section. Cut up brie cheese, I remove all the skin, and place them in the cup. Top with raspberry jam and top with nuts - although optional- pop in the over at 350 till melted.

I dont think it gets any easier then a shrimp ring.
My favorite make at home appy is fresh mozz wrapped with prociutto and drizzled with balsamic vinegarette. It's so easy and it's always a hit.

2 (10 ounce) cans chunk chicken, drained 2 (8 ounce) packages cream cheese, softened 1 cup Blue Cheese (or Ranch Dressing) 3/4 cup Frank's Red Hot 1 1/2 cups shredded Cheddar cheese Heat chicken and red hot until heated through. Stir in cream cheese and dressing. Cook, stirring until well blended and warm. Mix in half the cheddar cheese and transfer mixture to serving dish.Sprinkle of the remaining cheese over top, cover, and cook in microwave or oven until heated through.
Serve with celery sticks, crackers and/or tortilla chips.

shrimp cocktail
peel and devein shrimp (or buy them that way) and sautee in olive oil, garlic, and a bit of white wine until just cooked.
allow to chill
combine horseradish with peter luger sauce to your specific taste (I love extra horseradish), serve with chilled shrimp.
antipasta platter
cure meats, cheeses, and olives on a platter with breadsticks
guacamole (ok, not that easy but people won't come to my house unless I make it)
for every 2 avocados, finely mince
2 garlic cloves 1/4 small onion 1/2 jalapeno (remove seeds for less heat) few sprigs of cilantro
combine with lime juice and salt to taste. serve with veggies or chips.

I made this for the first time a couple of years ago and everyone loved them and it was so easy to make. It is Cranberry Meatballs First, I made them in a crockpot what I did was one can Jellied Cranberry and one bottle Chili Sauce I mix this in the crockpot and then I added about 3lbs small meatballs ( bought these frozen, italian style from BJ's). Let it heat in the crock pot a few hours and there great. I serve them for all holidays and have many requests to bring them. The kids have me make them for dinner and serve them with either mashed potatoes or egg noodles. :)

Cheese Thing: (the name has been long since forgotten)
1 phyllo sheet, thawed 1 block of Havarti cheese - I guess about 10oz dijon mustard tarragon chives fennel seed
spread mustard on top of cheese, sprinkle with herbs. Place cheese, mustard side down, on phyllo sheet. Wrap sheet around cheese, sealing seams with a wet finger.
Brush with egg wash and chill 20 minutes. Bake at 350 for about 20 minutes. Serve with fruit and crackers.
