Looking for salad recipe
Hi- I am looking for some NON MAYO-based cold salads that will travel well for a picnic. We are covered on pasta and lettuce salads. Any creative ideas? TIA!

what about a roasted edamame and corn salad?
or an avocado salad. similar to guac but you don't need chips. or guac and chips.

German potato salad is delicious cold and it's mostly just vinegar, NO MAYO. Since pasta and lettuce salads are already covered, it might be worthwhile to bring a potato based salad.
Or you can do asian coleslaw. it's basically a non mayo coleslaw, you add nuts and ramen noodles and for the dressing its the asian ramen noodles seasoning packet mixed with oil. It's very good.
You can do a corn, bean, red onion and avocado salad.
Or a tomato, basil, mozzarella type salad.

I love the crunchy asian salads mentioned. Just make sure to combine the salad, crunchies, and dressing at the last minute.
Another idea would be a mexican bean salad or cucumber salad.

Antipasto Pasta Salad
Ingredients 2 tablespoons plus 1/2 teaspoon salt 1 tablespoon olive oil 1 pound rotini pasta 2 teaspoons minced garlic 2 teaspoons balsamic vinegar 1 teaspoon Emeril's Italian Essence, or other dried Italian herb mixture 1/2 teaspoon freshly ground black pepper 1/4 teaspoon crushed red pepper 1/4 cup plus 2 tablespoons extra-virgin olive oil 1 1/2 cups 1/4-inch cubes provolone 1 cup thinly sliced oil-packed sun-dried tomatoes, drained 1 cup thinly sliced salami (1/4 pound) 1 cup thinly sliced prosciutto (1/4 pound) 2 tablespoons finely chopped fresh parsley leaves 2 tablespoons finely chopped fresh basil leaves
Directions
Combine 2 tablespoons salt, the olive oil, and 4 quarts water in a large pot over high heat and bring to a boil. Add the rotini and cook, stirring occasionally to keep the pasta from sticking together, until just al dente, about 9 minutes. Meanwhile, mash together the garlic and remaining 1/2 teaspoon salt in a large bowl. Add the balsamic vinegar, Italian Essence, black pepper, and crushed red pepper. Whisk to blend. Gradually whisk in the olive oil. Drain the rotini and rinse under cold running water until cool. Add to the vinaigrette, along with the provolone, tomatoes, salami, prosciutto, parsley, and basil. Toss to mix. Serve immediately or cover and refrigerate until ready to serve. Let the salad return to room temperature before serving.
ETA: Duh, just realized you weren't looking for a pasta salad recipe... Oopsie! This is an amazing recipe though, so I won't delete it.

i made a cucumber, red onion, tomato & avocado salad recently. so tasty & fresh. added lime, salt & a drip of evoo too.

Maybe a tomato mozzeralla salad, basically tomatoes, basil , fresh mozzarella, balsamic and oil, Salt, pepper

Thanks for the ideas! I have done a tomato mozzarella salad 3 times already this summer, so I am tired of it, but I really like the idea of doing a black bean/corn/avocado salad and serving with chips. I think I will also try a panzanella salad and just bring the bread and toss right before serving. A cucumber salad would be great (my dad loves this) but I think I will stick to a basic vinegar/sugar recipe, since I have tomatoes in two of the other salads. Does anyone have a recipe that they like? Looking for something like this: Cuke Salad

Looking for salad recipe
Indian salad recipe salad basket!
Ingredients:
1 big potato (aloo) (boil ed) 1 big sweet potato (shakarkand) (boil ed) 1 cucumber (kheera) (peeled) 1 Tomato (Tamatar) 1 cup sprouted moong dal 1/2 cup pomegranate (anar) 1 green chilli (chopped) 3 tsp green coriander leaves (dhania patta) (chopped) salt (namak) to taste 1 1/2 tsp chaat masala 2tsp lime juice
How to make salad basket:
Cut potato, sweet potato, cucumber and tomato into thick pieces. Scoop them from inside. In a bowl put sprouts, pomegranate, green chilli and inner part of porato, sweet potato, cucumber and tomato. Add salt, chaat masala and lime juice. Mix well Put the mixture in hollows of vegetables. Garnish with green coriander leaves and serve.
