Low Carb Dieters Tell Me Your Favorite Foods
I am low carb dieting and also a vegetarian. As you can imagine, there is very little I can eat besides eggs, cheese, veggies, and nuts. I am looking for suggestions on food items that will work for me. TIA!

I don't eat meat either, though I occasionally eat fish. Here are a few of my low-carb favorites:
South Beach Fake Waffles
2 large eggs 1/4 C Lowfat Ricotta Cheese (store brand) 1 T Granular Splenda, more or less to taste 1/2 t. Baking Powder 1/4 t. Cinnamon, more or less to taste (optional) Dash Nutmeg, more or less to taste (optional)
Mix everything together and pour into Belgian waffle maker (I set it at the highest level so it comes out crispy).
Weight Watchers Chili (Modified for Phase 1 of South Beach)
1 bag of Morningstar Veggie Crumbles (to replace meat - even my DH who is a huge meat eater loves the veggie crumbles) 1 can Kidney Beans 1 can Pinto Beans 1- 4 ounce can chopped green chilis 1 can fat free refried beans 1 - 15 ounce can diced tomatoes 1 - 16 ounce can (or 2 - 8 ounce cans) of tomato sauce 1 large onion 1 package taco seasoning 1 package Hidden Valley Ranch dry dressing mix
Chop onion and cook with veggie crumbles until the crumbles are defrosted. Add the rest of the ingredients. The original recipe says not to drain anything, but I usually drain the beans anyway. Otherwise, it's a little too liquidy for my taste. Also, I sometimes add a second package of the Hidden Valley Ranch for a more tangy flavor.
Bring to a boil over medium heat and then simmer for 15 minutes.
Lentils (Garides style)
1 large onion, diced 1 can organic lentils (you can make dry lentils too, but I always mess that up) 1 can of Muir organic diced tomatoes with garlic and onions (I've found that Muir tastes a lot better than Del Monte diced tomatoes) 1/2 block or package of reduce fat feta cheese, crumbled. 1 tsp of tomato paste (optional)
Spray saute pan with Pam, add diced onion. When onions look translucent, add lentils, tomato paste and diced tomatoes. Stir for a few minutes, then add feta cheese. Keep stirring. I usually know it's done when everything turns pink-ish.
Curried Chickpeas
3 tbsp margarine 1 large onion, finely chopped 2 tbsp freshly grated ginger 1 clove of garlic, minced 1/2 tsp turmeric powder 1/4 tsp cayenne pepper 1/2 tsp garam masala 1 15-oz can of garbanzo beans or 2 cups cooked chickpeas 1/2 tsp amchur powder (dried mango powder) 1/2 tsp coarse salt
In a large skillet, heat margarine. Add the onoin and cook until softened, about 4 minutes. Add the ginger and garlic and cook until fragrant, about 2 minutes. Add the turmeric, cayenne and garam masala and stir for ~ 1 minute. Add the chickpeas, amchur, salt and 1/2 cup of boiling water. Cook uncovered for 15 minutes.

I don't eat meat either, but I do eat seafood.
Here are some things I snack on: hummus guacamole olives cheese apples with peanut butter pretzels with warm cream cheese (mock dip) blueberries and strawberries bite size muffins garden burgers
Try Sweet Baby Ray's honey BBQ sauce on garden burgers to kick up the flavor. I use it to help cut back on all the mayo I tend to use.
Veggie crumblers by morningstar is a fantastic staple in making a hearty "meat" sauce, a lower carb lasagne (more sauce layers than pasta layers), or try the stuffed peppers receipe but subsitute meat for the crumblers. I also am a huge fan of soups ! Campbells butternut squash, progresso lentil and mac bean are all so yummy and filling. HTH

it sounds weird, but canned pumpkin...
I mix it with splenda and cream cheese and it makes a great breakfast or sweet treat!
I also finally found jicama and I love it!!!

I also finally found jicama and I love it!!!
I actually saw them using jicama on Top Chef as a "taco shell" last week
It's also really good with almond butter or natural peanut butter (cut into little sticks, like celery).

Those fake waffles sound awesome. I'm making those for sure.
I made spaghetti squash pasta last night.
Cut 1 spaghetti squash in half and take out seeds, put in microwave safe dish with 1 inch of water at the bottom. Cook on high for 6-10 minutes. Once you can take the squash out with a fork easily it's done. The squash looks like spaghetti.
Sauce Simmer some oil and 3 or 4 cloves of garlic until the garlic is translucent. Take one can of crushed tomatoes and bring tomatoes up to a boil. Put a dash of baking soda and keep stiring until the bubbles stop. Don't let the sauce boil over. Turn down heat if it seems like it is. Add salt and pepper to taste and let sauce simmer for about 10-15 minutes until cooked.
Add sauce to spaghetti squash. Mix and top with low fat mozzerella cheese. Bake in the oven to melt the cheese. sprinkle some pecorino romano over the top. YUMMMMMM I'm Italian, I've gotta get my pasta some how.

I've been just cutting it up with some lime and salt, and sometimes a sprinkle of chili powder

I'm low carb too and I'm vegetarian, though I do eat fish.
I bake a lot, so any of my baked goods are for breakfast - I make lots of muffins with very little sugar, oats, oat bran, and whole wheat flour. I bought a vegan baking book so that helps a lot.
For lunch I always get a salad, topped either with beans, chickpeas, cheese, tofu or eggs, so I'm getting my protein. Sometimes I'll mix it up and get brown rice, vegetable sushi.
I snack on fruits, veggies, cottage cheese, laughing cow cheese, yoghurt, hummus, tahina, etc.
For dinner we eat fish about 2-3 times a week, with a side of whole wheat couscous, sweet potato, brown rice, or some veggies.
Otherwise we eat for dinner omelettes, shashuka (a traditional israeli dish with red sauce and eggs), veggie burgers in whole wheat pita, vegetarian meatballs with whole wheat pasta, etc. We almost always have hummus with our eggs.

Also, my israeli DH introduced me to the most yummilicious, satisfying, fulfilling lunch. Whole wheat pita stuffed with hummus, onions and hardboiled egg. Packed with protein and it really fills you up!

2) mixed only with a little bit of I Can't Believe It's Not Butter, reduced fat grated Parmesean, and reduced fat mozzarella. Very tasty!

I cook it and then sautee it with garlic and EVOO, and add mozzerella
