Low carb peeps - need ideas

I'm trying to change things up and do a little low carb for a bit (I have PCOS so I need to anyway).

I need some meal ideas - I'm at a loss.

Breakfast - I just ate an apple with some peanut butter b/c the thought of having eggs again is not appealing Chat Icon

Lunch - ??????

dinner - ????????

I need help!!!!!!!!!!!!!

Lunch - most days I have a sald, loaded with veggies,and I make sure I have some protein on it, whether it be tuna, eggs or chickpeas (I don't eat meat).

Dinner - 2-3 nights we have grilled fish (tilpia, trout, salmon), with grilled veggies (onions, zucchini, tomatoes, etc) and a small side of potatoes or whole wheat couscous or brown rice.

Other nights we mix it up with eggs (omelette with hummus, shakshuka, which is an israeli dish with eggs and tomatoes, with pita and hummus, or egg schnitzel, which is eggs mixed up with some bread crumbs, with hummus and an israeli salad). Other nights we'll have falafel with whole wheat pita, israeli salad and hummus, or a veggie burger on a whole wheat bun with a sweet potato or corn on the cob.

All that stuff sounds great but here is my other HUGE problem. My husband can literally eat us out of house and home - he's a landscaper with an appetite that never ceases to amaze me.

Its so hard to fill him up, keep it healthy for all of us and find things that we all like. I just don't have the time to make 2 meals - Im lucky I have the time to make one.

My husband is the same... so what we usually end up doing is, at least for our fish, buy a HUGE salmon or several pieces of tilapia and grill it up, so he can have more servings. And for the side, I usually just take a little bit of couscous or brown rice, and he eats the rest of the package.

Good thinking - he's just such a PITA to cook for. I actually stress out when I go food shopping (add 2 kids and its a real fun fest Chat Icon Chat Icon ) b/c I never know what to get. He'd eat spaghetti and meatballs every night but I'd be 900 pounds Chat Icon

This week should be interesting....its almost like an experiment Chat Icon

I just had 2 eggs for breakfast,

I'll have grilled blue fish and salad for lunch

And for dinner, I marinated a flank steak in montreal steak seasoning, vinegar, oil, water and soy sauce and we'll grill it on the BBQ with some asparagus.

My husband is a firefighter so I know about insatiable appetites. I have to make a big dinner - luckily he doesn't need to lose weight because he fills up - there are never any left overs - and usually makes himself dessert later in the evening!

For breakfast I had an apple with some peanut butter - I could live on peanut butter!!!!!!

Lunch - I'll hit stop & shop and make myself a salad. I need to go food shopping desperately.

Dinner - I'm actually thinking about making Roman Style Chicken - it has proscuitto, peppers, chicken stock, touch of wine......OMG......its delish.
I usually do a side of pasta to go with it but I'll forgo it and have a salad.

Also I may do turkey sausage soup with white beans and spinach - really easy and good as well. Again, can add pasta to it for everyone for them to fill up.

I usually have canned pumpkin with one splenda and a couple of tablespoons of cream cheese warmed in the mircrowave for a munute for breakfast

lunch and dinner and usually meat and salad/veggies

I made an awesome stuffed flank steak the other night with pepper jack cheese and spinach...yum!

turkey sausage and spaghetti squash is another favorite

chicken fajitas (no wraps of course)

meatloaf without the bread crumbs...dh can't even tell the difference Chat Icon

whenever I do SB, I love chicken cutlets made with parm cheese instead of breadcrumbs!!

and mock mashed potatoes - mashed cauliflower - with butter, milk and a bit of paprika

I am the worst when it comes to breakfast, so I try to make a fritatta and will make it with any leftover meat (even steak, etc.) and then a bit of cheese and of course egg. I can eat it cold or pop it into the microwave. When i was really good, I used to make them in little mini muffin cups so I could throw a few in a bag and eat them at work.

Salads are awesome during lunch.

And for dinner I always eat meat and veggies. I'll make rice/potatos/etc. for DH and just not have them myself. That way, he is filled up (big eater there!) and I'm doing ok.

you doing SB? I need to get back on track, and soon...

Breakfast - egg white omelet with peppers and cheese or spinach. Something to load it up with.....

Slow cooked oatmeal.
Dannon Lite and Fit yogurt (60 cals, no sugar, no fat) with a cup of fruit.
Khashi Go Lean or Fiber One cereal with 1% or skim milk.

Lunch: salads with tuna or grilled chicken. Sometimes loaded with chick peas or cannelinni beans.
Turkey breast rolled up in Romaine hearts.


Dinner: Any lean meat, with 2 veggie sides and just pass on the potatoes or pasta sides.
