pasta salad.
you could do cold tortellini with wedges of salami, ham, turkey, provolone, olives, tomatoes and cucumbers. toss with dressing of your choice.
I also make one with tuna. tri color rotini, drained canned tuna, tomatoes, cucumbers, shredded carrots, celery, again toss with dressing.
another...cold pasta of your choice, grilled chicken, avocado, black beans (drained and rinsed), cheddar cheese, corn, diced peppers (fresh), red onion.

Tuna salad, egg salad, fruit salads, chicken salad. Some of the cold items I makde for DH when he is at a site with no microwave.
