Lunch Ideas-What do you eat for lunch?
I'm tired of scrambling and putting crap together everday for lunch. What are some good ideas for lunches that are easy and meat-free?

I have a great cheese tortellini recipe-includes sugar snap peas, tomatoes, some red onion...the dressing is low fat mayo and white balsamic vinegar with 1 tbsp. of capers (drained). You can use that as a base for anything else for lunch...other than that, I do some leftovers, veggie burgers on english muffins, etc...hth
P.S. I love lunches I need to heat up
ETA that I also take fruit and a snack..I read the part about scrambling and didn't know if you meant the entire lunch-

I've been going down to Waldbaum's on my break to pick up salad from the salad bar (the Hauppauge/Islandia Waldbaum's has a really nice salad bar!). I also have brought cheese and triscuits with grapes as a snack.

What I like to do is take leftovers from the night before, or freeze a little bit of something I had so I can grab it and go at anytime. I'll sometimes cut up some veggies, toss in a ziploc with some lettuce, bring a pita and some salad dressing and put it altogether at lunch time. Hummus and pita is a good lunch You can roast some veggies ahead of time and make roasted vegetable sandwiches Any kind of pasta salad is usually easy to make and bring

I usually bring a homemade garden salad w/cucumbers, LF feta, almonds, red onion & some dressing
What about greek yogurt with some honey or granola (very filling)
Pasta salad with some broccoli, olives & FF Italian dressing

Usually some form of last nites dinner. Either added to vegatables or mixed into a salad. I always make extra knowing I will take it to work the next day.

I like to take leftovers from dinner
also- knish's - get them in the hot dog section at the grocery store, they heat up nice and are not too fattening!
a salad is a great idea! you can add different things to it every day!

I eat cereal for lunch all the time, I bring in milk every monday and use it all week long in my coffee and cereal...if I bring cereal for breakfast then I'll have toast or a bagel for lunch, or fruit, or a soda and some cracker, I almost ALWAYS eat breakfast, so I eat a small lunch.
