Making Lemon Chicken tonight
I've been using this recipe for years and it's still a favorite! It's SO easy and delish, and I usually serve it with rice to soak up all the sauce

Ingredients: 1 1/2 pounds chicken breast or chicken tenders, cut into chunks 1/4 cup all-purpose unbleached flour Coarse salt 2 tablespoons vegetable oil 1 tablespoon white or rice wine vinegar 1/2 cup chicken broth or stock 8 ounces (1 cup) prepared lemon curd 1/4 cup hot water 1 lemon, zested 2 scallions, thinly sliced or 20 blades fresh chives, finely chopped
Directions: Coat the chunked chicken lightly in flour, seasoned with a little salt. Heat a large skillet over high heat. Stir fry chicken until golden, 3 or 4 minutes. Remove chicken from the pan and return pan to heat. Reduce heat to medium.
Add a splash of vinegar to the pan and let it evaporate. Add stock or broth to the pan and scrape up any drippings with a whisk. Thin curd by stirring in a little hot water. Add curd to broth and whisk to combine. Add chicken back to the pan and simmer for 1 to 2 minutes to thicken sauce and finish cooking chicken pieces through. Remove the pan from heat, add the scallions or chives and zest, and toss chicken pieces well to combine zest and scallions or chives evenly throughout the sauce.

'tis a delicious type of vinegar, usually of Chinese or Japanese origin
I believe it is sweeter, too!

I believe it is sweeter, too!
It is, but I never have it in the house, so I use plain white vinegar and it comes out perfectly!

I have a really stupid question - where in the grocery store is the lemon curd? I looked for it a few weeks ago for a different recipe and I couldn't find it. I asked and they had no idea.

I just bought it at the supermarket. they had it near the jelly aisle but I have also found it near the pie filling baking aisle.

If you can't find it in the jelly or pie filling aisles, try the Irish section! All the curds are there for some reason They have it in Stop and Shop for sure, and in Pathmark/Waldbaums I've found it by the rest of the jellies.

I was wondering where I would find that too.
You could make it yourself. Ina Garten has a really easy recipe:
Lemon Curd Recipe
Ingredients:
3 lemons 1 1/2 cups sugar 1/4 pound unsalted butter, room temperature 4 extra-large eggs 1/2 cup lemon juice (3 to 4 lemons) 1/8 teaspoon kosher salt
Directions:
Using a carrot peeler, remove the zest of 3 lemons, being careful to avoid the white pith. Put the zest in a food processor fitted with the steel blade. Add the sugar and pulse until the zest is very finely minced into the sugar.
Cream the butter and beat in the sugar and lemon mixture. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined.
Pour the mixture into a 2 quart saucepan and cook over low heat until thickened (about 10 minutes), stirring constantly. The lemon curd will thicken at about 170 degrees F, or just below simmer. Remove from the heat and cool or refrigerate.

Thanks LB.....that recipe looks fairly easy, but if it's with the jellies in Waldbaums, that's even better

I made it last week and did not like it at all but DH and BIL did as well as my 1 year old - she totally gobbled it up. It was way too sweet and saucy for me, even with the rice. Bummer!!!

Awww glad they liked it anyway! I like things sweet and saucy maybe that's why it's a favorite

I made this last night also. Could not find the lemon curd anywhere, so made my own. I found it a little sweet, but if you cut down on the lemon curd it will probably reduce the sugar. Tasted great for lunch today! Thanks LB

made this last night and was definitely the BEST lemon chicken I have ever had!! Listened to some of the other posters and put in about 1/2-3/4 cup of the lemon curd so it wasn't too sweet. DH LOVED it! Will definitely make this one of my go-to recipes!!
