Stove-Top Chicken Parmesan This quick, delicious meal is perfect served over spaghetti or angel hair pasta with a side salad.
Serves 4 3 TB extra virgin olive oil, divided 1 pint (2 cups) cherry tomatoes, halved 1/2 cup fresh basil leaves, chopped 1/2 cup shallots, sliced sea salt, to taste ground pepper, to taste 1/2 cup whole wheat bread crumbs 1/4 cup grated Parmesan cheese, divided 4 skinless, boneless chicken breast cutlets Heat 1 tablespoon olive oil in a skillet over medium high heat. Sauté tomatoes, basil and shallot, adding salt and pepper to taste, for 10 minutes, stirring often and breaking the tomato halves up with a spoon. Turn heat down as needed to simmer.
Mix bread crumbs with 2 tablespoons of the Parmesan cheese on a plate. Add salt and pepper as desired. Coat each chicken cutlet with this mixture.
In another large skillet, heat remaining oil over medium heat. Cook chicken cutlets about 5 to 6 minutes on each side, until browned and cooked through. Remove from heat.
Spoon 1/4 of the cooked tomato mixture over each cutlet. Sprinkle with remaining cheese. Cover and let the cheese melt for a couple of minutes before serving.
