Mashed Potato recipes?
I am looking for a really yummy but fairly easy mashed potato recipe.
Any ideas?

I think the way I make mine is pretty eas. Peel and cut up the potatoes. Put in cold water with some salt. Boil until potatoes are soft. Mash with some butter and milk until they are the constancy you like. Sometimes I will add a clove or 2 of peeled garlic into the pot at the beginning. It gets soft while the potatoes boil and gets mashed with everything else.

I made a really yummy Broccoli Smashed Potatoes from Down Home with the Nealys
Basically it was boing yukon potatoes ( and you dont have to peel these) and then putting in broccoli florets---drain and then mash in the pot mixing it with a butter/milk sauce you cook alongside it

i never peel mine...and i love the result!
i add in garlic, chives, parsley, basil, milk & butter and sometimes finely chopped onions.

I use Yukon Gold or Red and I never EVER peel them.
I boil them, add heavy cream, butter, fresh chives, salt, pepper, goat cheese or gorgonzola, and crushed garlic.
So good.

Tangy Casserole Potatoes
12 medium size all purpose potatoes peeled & Halved 1/2 cup butter or margarine 8 oz cream cheese cut in small pieces 1 cup (8 oz) sour cream 2 tsp salt 1/4 tsp pepper 1/4 tsp paprika
Put potatoes & enough water to cover in a large pot on high heat. Cover & bring to a boil. Reduce heat to medium. Partially cover & cook at low boil 20 minutes or until tender. Drain & add cream cheese, remove from heat. Beat with a wooden spoon until cream cheese is melted & mixture fairly smooth. Mix potatoes w/mixer into butter mixture. Add sour cream, salt & pepper and beat until smooth. Spread evenly into a greased 13x9x2 baking dish or a shallow 2 1/2 casserole. Sprinkle with paprika. Cover & refrigerate over night or until cooking time. Remove from refrigerator 15 minutes before baking. Uncover & bake in preheated 350• oven for about 35 minutes until heated through & slight crust forms.

If I want to go low fat I'll boil them in chicken broth for flavor and avoid putting in a lot of butter. If I'm feeling like a ridiculously fatty but delicious meal I'll mash them with sour cream . I also love Rachael Ray's BLT (bacon, leeks, and tomatoes) smashed potatoes.

I just made these the other night, I'm not a huge mashed potato person though, but DH loved them!
Garlic Mashed Potatoes
Ingredients: 1 1/2 pounds unpeeled potatoes 5 garlic cloves, peeled 1/3 cup sour cream 2 tablespoons milk 2 tablespoons fresh snipped parsely 1/2 teaspoon salt 1/8 teaspoon ground black pepper
Directions: Cut potatoes into 1-inch cubes; place in Small (2-qt.) Saucepan. Add garlic and enough water to cover potatoes. Bring to a boil; reduce heat. Cook 8-10 minutes or until potatoes are tender. Drain potatoes and garlic; return to saucepan. Mash potatoes and garlic using Nylon Masher. Stir in remaining ingredients; mix well. Yield: 6 servings
Nutrients per serving: Calories 35, Total Fat 2 g, Saturated Fat 1.5 g, Cholesteol 10 mg,

I'm not a huge mashed potatoe fan... so I put a whole head of roasted garlic in mine.
I had some left over "soft flavored cheese" aka alloutte cheese - thought that would be great in mashed pots or just on top of a baked pot but I haven't tried it yet.

I add garlic powder, pepper, salt, butter & fat free half & half. Sometimes I add caramelized shallots. I beat mine with an electric mixer to make them fluffy.

I made them this weekend. Very easy and you can add more things to it if you like:
Did not peel, cut up potatoes and boiled. Put in mixer with 1 stick of butter and milk, salt and pepper.
Yumm :)

these sound so yummy, I'm gonna have to try these. I usually peel my potatos, if I don't peel them is there a lot of skin after mashing?
