Pasta Salad and Potato Salad recipes needed!
I'm having a huge BBQ on Sunday, and I wanted to make pasta salad and potato salad, neither of which I've done before. Does anyone have any fairly easy, yummy recipes that I could easily double or triple? TIA!

For pasta salad, I make the spiral pasta. I add a bottle of italian dressing and some diced up veggies/cheese depending on what I have in the house. I usually add roasted red peppers, broccoli, olives and cubed provolone cheese. Very easy to double/triple. For every pound of pasta you need a small bottle of italian dressing.
I have recipes for some fancier ones that I have made, but this is so easy and if you need a lot, I am guessing you want to stay kind of easy. Let me know if you want a different recipe!

I make the pasta salad from the box (Suddenly Salad) and every single time I make it I never have left overs and everyone always compliments me on it. I LOVE this pasta salad. As a matter a fact, I just bought 3 more boxes of it this morning when I went to the supermarket before work cause it is on sale this week, lol. It is so good.

I don't know what kind of potato salad you like but I always make a chunky red potato salad. Everyone asks me to bring it to BBQ's and it is soooo easy!
5 lbs red potatoes 5 eggs mayo vinegar parsley
-Boil the potatoes til fork tender, but not mushy. -Hard boil the eggs. -Let the eggs and potatoes cool. -Put the eggs and potaotes in a large bowl and roughly chop them. I use a big spoon and just break everything into big peices. -Sprinkle with about 1Tablespoon of vinegar and mix everything around again -Mix in mayo. Its hard to give an amount because sometimes the potatoes absorb more and sometimes less, but you need a decent amount of mayo. Just keep adding a little mayo at a time and mixing til you get the right combo -Sprinkle with parsley

I love this recipe. I don't like too much dressing so I use less mayo & 1 1/2 tablespoons of dijon mustard instead of dijonaisse. Enjoy.
Ingredients 2 lb small red or white potatoes 1 kg 1 cup HELLMANN'S® Real, Light or Ultra Low Fat Mayonnaise 250 mL 2 tbsp HELLMANN'S® DIJONNAISE Creamy Mustard 30 mL 2 tbsp chopped fresh dill or parsley 30 mL 2 tbsp white vinegar 30 mL 1/2 tsp salt 2 mL 1/4 tsp pepper 1 mL 1 cup chopped celery 250 mL 1/2 cup chopped green onions 125 mL Preparation Instructions 1) Cook potatoes in boiling salted water 15 minutes or until tender. 2) Drain well, cool and cut into quarters. 3) In large bowl combine mayonnaise, Dijonnaise, dill, vinegar, salt and pepper. 4) Stir in potatoes, celery and onion. 5) Cover and chill 1 hour to blend flavors.

I make my potatoe salad with blue cheese. prob no way calorie friendly , but really good,
Approx 2 lbs of red potatoes Boil them till fork tender. let them cool, Mix , approx 1 cup of mayo, 1/4 cup of dijon mustard & 1/2 cup chunky blue cheese ( i use maries) aprox 1/2 cup chopped bacon add about 3 tbls white vinegar to that. When the potaoes are cooled down , add this mixture to it & then chill before serving , Its really good.
pasta salad. Um this is always a pleaser in my family.
Bow tie pasta bunch of arugula ( or spinach) Approx 4 - 5 cloves garlic chopped or sliced very fine. 1 cup - 2 cups mozarella balls of chopped mozarella package of raw( not peeled ) carrots pinwheel sausage ( COOK THIS AHAED OF TIME , HOWEVER U LIKE, BBQ FRY BAKE ETC)
Now take approx 1/3 cup evoo & fry up the garlic ,. next add the carrots, just as you would peel a carrot ( like shavings) to the pan, if you feel they are too long , cut in half. cook until they are soft & then last min add the arugula to it till it wilts. then the sausage cut up .. Mix this all with the pasta . Let cool or eat cold. Top with grated cheese

i love this greek pasta salad!!
1/2 cup olive oil 1/2 cup red wine vinegar 1 1/2 teaspoons garlic powder 1 1/2 teaspoons dried basil 1 1/2 teaspoons dried oregano 3/4 teaspoon ground black pepper 3/4 teaspoon white sugar 2 1/2 cups cooked elbow macaroni 3 cups fresh sliced mushrooms 15 cherry tomatoes, halved 1 cup sliced red bell peppers 3/4 cup crumbled feta cheese 1/2 cup chopped red onions 1 (4 ounce) can whole black olives 3/4 cup sliced pepperoni sausage, cut into strips
DIRECTIONS In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, red onions, olives, and pepperoni. Toss until evenly coated. Cover, and chill 2 hours or overnight.

I was watching Sunny Anderson on the food network and she made this Roasted Potato and Chicken salad- it looked SO good!
Picnic Potato and Chicken Salad Recipe courtesy Sunny Anderson, 2008 See this recipe on air Wednesday Jul. 16 at 1:30 PM ET/PT.
4 Idaho potatoes, peeled and cubed 1 1/2 tablespoons extra-virgin olive oil Salt and freshly ground black pepper 1 (6-ounce) skinless chicken breast 3 slices cooked bacon, crumbled 1/4 cup diced celery 1/4 cup diced onion 1 garlic clove, minced 1/2 cup mayonnaise 2 teaspoons mustard 1 tablespoon paprika 2 tablespoons chopped parsley leaves 2 sage leaves, chopped 2 heads Bibb lettuce Preheat oven to 400 degrees F. Place potatoes on a sheet tray, toss with oil, season with salt and pepper, and roast until golden and tender, about 30 minutes. Meanwhile, in a saucepan cover chicken with water and bring to a simmer over medium heat. Poach until cooked through, about 15 to 20 minutes. Remove from poaching liquid, let cool for a bit, and cut chicken into cubes. In a large bowl, toss together potatoes, chicken and bacon with the celery, onions, and garlic. Add the mayonnaise, mustard, paprika, herbs, salt and freshly ground black pepper, to taste. Mix until well combined. Serve salad in Bibb lettuce cups. Roll up and eat.

Sunny didn't mince the garlic and add it to the solid ingredients (chicken etc.) as it tells you to do in the recipe. She squeezed the garlic in a garlic press directly over the bowl with the mayonnaise and other dressing ingredients. The garlic juice and pulp really permeate the dressing and salad in a WONDERFUL way. I don't think it would be as good if you just added minced garlic to the solid ingredients. Also, Sunny poached the chicken in water to which she added 5-10 peppercorns, a bay leaf and a sage leaf. That should give the chicken better flavor than just using plain water as it directs in the recipe. Thank you Sunny, for a wonderful alternative to my regular potato salad!
