Re: Meatloaf

I've made this recipe many times. It's a WW recipe and DH loves it ( he usually hates WW stuff)

2 teaspoons canola oil
1 cup finely chopped mushrooms
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1 pound lean ground beef
1/2 cup quick cooking oats
1 large egg
1 tablespoons tomato paste
1 tablespoon Worcestershire sauce
3-4 garlic cloves, minced
1 teaspoon finely chopped fresh rosemary, or 1/2 teaspoon dried
1 teaspoon finely chopped fresh sage, or pinch dried
1 teaspoon finely chopped fresh thyme or 1/2 teaspoon dried
1/4 teaspoon hot red pepper sauce
1/4 cup tomato puree or tomato sauce

Preheat oven 350 degrees. Spray a 9 inch square baking pan with nonstick spray. In a large nonstick skillet, heat the oil. Saute the mushrooms, onions, carrot, and celery until softened, about 5 minutes.

In a large bowl, combine the sauteed vegetables, beef, oats, egg, tomato paste, Worcestershire sauce, garlic, rosemary, sage, thyme, and pepper sauce. Shape into loaf and place in pan. Bake 30 minutes. Top with the tomato puree {diluted with a little water if needed} ( I used Peter Luger sauce and it came out delicious) and bake 30-45 minutes longer.

Re: Meatloaf

Don't know if you already made this but here is my recipe. I use ground turkey:

1 pkg ground turkey
i can cream of mushroom condensed soup
one package lipton onion soup mix
crushed up cracker add until you get the right consistency
Bake at 400 for about 40 minutes. It is awesome
Oh and I usually coat the putside with ketchup or BBQ sauce

I don't make it often because I don't really care for it, but my DH loves it.

I usually just add one egg, fresh parsley, cheese, salt, pepper, 1 slice of moist white bread, garlic powder in lean ground beef and mix all these ingredients together. Then i place it in a glass baking dish and with my hands I make a slit down the middle to open the inside and put shredded mozzarella cheese in it and then close up the loaf and bake. My husband likes it with gravy and mash potatoes. Now that the weather is getting cooler, i'll probably make it for him.

Re: Meatloaf

I buy the meatloaf mix that has the veal, pork and beef. I dont really measure anything so I can't tell you how much to add but here is what I put in.
italian pepper(half)
carrots
mushrooms
I put those three in a food processor so it is as fine as i can get it. Then I add 1 egg some tomato sauce, bread crumbs, 1 packet of onion mushroom soup mix, salt and pepper. I think put it in a loaf pan and bake it on 375 for an hour.

Re: Meatloaf

Sorry I don't have exact measurements:

Chop meat
small grated onion (cheaper and way less salt then Lipton soup mix)
breadcrumbs
a squirt of ketchup or plop of beef gravy
maybe some worstershire
tabasco
grated cheese
garlic powder
a little salt and pepper
1 egg

Mix, form, put a little beef gravy on top and bake

Now for my special individual meatloaf...
same recipe, but for DH's in put a layer of meat, then top it with cooked green pepper, onion and mushroom. Then either a hot link (sausage) or 1 sausage, a few pieces of cheddar cheese top with more meat and bake.
For mine, its just meat, mushrooms meat, gravy.

I bought little loaf pans and they are the perfect size.

Re: Meatloaf

I just made it the other night.

Ground beef
1 pack of onion soup mix
1 egg
1/2 cup milk
breadcrumbs to absorb milk (or use a slice of bread wet and crumbled)
BBQ sauce to make it moist

Cook at 400 for 1/2 hour. My DH likes it too when I put a few slices of bacon on top while it cooks.

Re: Meatloaf

I also use the Lipton Mix but I use the Beefy Onion mix and it comes out GREAT!
Instead of making one big meatloaf I make mini-meat loaves --- and they take a lot less time to cook and then everyone has a crispy end piece...
