Menu Thread - 8.10.14
Sunday: Date night at The Original George Martin in RVC
Monday: Shrimp and vegetable stir-fry with brown rice
Tuesday: Chicken cutlet, roasted red pepper and mozzarella paninis and french fries
Wednesday: Roasted garlic chicken meatballs with zoodles
Thursday: Grilled chicken and broccoli
Friday: Turkey burgers and baked parmesan zucchini 'fries'
Saturday: Filet mignon, mashed potatoes, asparagus and garlic bread

I'm curious about these garlic chicken meatballs...
My plan for this week is short since I'm away most of the week.
Sunday: Peach and Bourbon BBQ pulled pork sliders. Cole slaw on the side.
Monday: Pork tacos (left overs from last night minus the BBQ sauce.
Tuesday-Sunday- away.
Sunday night when we get back, I might pull some of my homemade gnocchi out of the freezer. If not, it's cheese sandwiches.

Sunday - tired from a wedding on Saturday...had leftover French toast from my diner hangover breakfast yesterday morning!
Monday - leftover pasta and a huge salad
Tuesday - grabbing a quick bite before seeing Tori Amos
Wednesday - if the weather is good, veggie burgers and grilled vegetables. If it stinks, soup and grilled cheese.
Thursday - attending an interview with Jared Leto so I have no idea Friday - pasta with sauce and meatless meatballs, salad
Saturday - I think we're going out with the in-laws, which is like my least favorite thing to do.

We barely ever go out to eat or do leftovers for dinner but we are having a crazy, crazy week so relying on leftovers and eating out.

Monday: Chicken Meatballs and Penne Pasta in a Red-Wine Mushroom Sauce with a Tossed Salad
Tuesday: One Pot Lemon Garlic Chicken Pasta

Here is the recipe, but I like to add more vegetables, so I always add a red bell pepper and sometimes string beans or green bell peppers in addition.
Ingredients
1½ cups quinoa broccoli, cut into small florets (at least 1 head) 3 tbsp. unsalted butter 3 tbsp. flour 2 shallots, diced 2 cups milk ¼ tsp. garlic powder ¼ tsp. dry mustard ¼ tsp. cayenne pepper Salt and pepper, to taste 8 oz. sharp cheddar cheese, shredded* 2 cups shredded cooked chicken
Cook the quinoa according to the package directions. Meanwhile, place the broccoli in a saucepan and add a couple inches of water. Cover and bring to a boil over high heat. Let boil just 1-2 minutes more, until the broccoli is crisp-tender. Drain immediately and rinse with cold water to stop the cooking. Set aside.
Preheat the oven to 400° F. To make the cheese sauce, melt the butter in a medium saucepan over medium heat. Whisk in the flour, shallots, garlic powder, dry mustard and cayenne. Continue whisking the mixture until it is light golden, about 1-2 minutes. Slowly whisk in the milk. Allow the sauce to simmer, stirring frequently, until the mixture bubbles and thickens, about 5 minutes. Remove from the heat. Whisk in the cheddar until melted and smooth. Season with salt and pepper to taste. In a large bowl, combine the cooked quinoa, broccoli florets, shredded cooked chicken and the cheese sauce. Fold together gently until evenly combined.
Transfer the mixture to a lightly greased casserole dish. Bake until the top is lightly browned, about 20-25 minutes. Serve warm.
*For best results, always use freshly shredded cheese. Pre-shredded cheese comes coated in things such as flour, cornstarch to prevent clumping and results in an unpleasant, gritty texture when melted.
