Menu Thread 6.22.14
Sunday: Grilled chicken topped with spinach, mozzarella and red peppers, cold tortellini salad as a side for DH.
Monday: Salmon with asparagus
Tuesday: Caprese quinoa bake and steak
Wednesday: Garlic shrimp and broccoli stir-fry, angel hair with garlic, oil and Parmesan cheese
Thursday: Turkey taco lettuce roll-ups
Friday: Grilled chicken with mixed veggies
Saturday: Going out for my little brother's high school graduation.

Sun: spinach lasagna roll ups with a side of roasted tomatoes
Mon: Kale falafel with pita's and homemade hummus
Tues: buffalo chicken burgers, sweet potato fries and sauteed squash
Wed: quinoa caprese bake
Thurs: eggplant vegan meatballs and sauce
Fri: turkey burgers and sweet potato fries

Sunday: Chicken Pot Pie and cranberry sauce
Monday: Steak pinwheels with asparagus and cauliflower mashed potatoes
Tuesday: Last day of work  going out to dinner with friends
Wednesday: Tomato, basil, mozzarella and quinoa salad
Thursday: Oven chicken fajitas
Friday: Quinoa stuffed peppers
Saturday: Going to Belmont - making a cold cut platter, tortellini salad and Reeses Cupcakes!

Sun - leftover Thai from Friday night...green curry with tofu, eggplant chili basil
Mon - grilled vegetable wraps...zucchini, yellow squash, orange peppers, mushrooms, Brussels sprouts in a vinaigrette marinade...either homemade fries or grilled potatoes on the Sid.
Tue - soy dogs, sauerkraut, steamed vegetables
Wed - same as Mon only the veggies are in an orange-ginger marinade
Thu - quesadillas on the grill
Fri - probably ordering in.
Sat - have to figure this one out! It may be the first day of Ramadan, so DH will beginning his fast if it is.

Menu Thread 6.22.14
Sunday- out at a graduation party
Monday- Roast chicken, baked sweet potatoes, broccoli cheese soup
Tuesday- Buffalo chicken lettuce wraps, baked fries
Wednesday- Chicken with alfredo sauce, fresh bread, spinach salad
Thursday- Grilled breaded pork chops with applesauce, baked beans, grilled zuccini
Friday- pasta with meatballs, salad, garlic bread
Saturday- hot dogs, baked beans, salad

Weds: Our anniversary, out!

Fri: homemade pizza

Sun: on vaca! Harvest in MTK!

Menu Thread 6.22.14
Now that my kitchen is back!!!!
Sun: Chicken cutlets with egg noodles and broccoli
Mon : Asian orange chicken with rice and peppers & onions
Tues: Left-overs (acupuncture night)
Wed : Portobello & baby bella mushroom risotto with grilled chicken and zucchini & squash
That's all I've got so far, I'll add more as I see what you are all having to get ideas!

As far as the quesadillas, I found a recipe on Pinterest that looked pretty good...no pre-grilling necessary for this type, though I could see needing to grill certain veggies prior:

Sunday: ate at my Sisters
Monday: Fit & Activ oven rotisserie Turkey Tenderloin (first time I made it and they loved it. Its seasoned and you just cook it in the oven for an hour, nice time saver), Cheddar Broccoli, Corn on the cob (oven roasted)
Tuesday: Carne Asada Fajitas
Wednesday: Leftover
Thursday: Turkey Meatloaf, Cauliflower mash, corn, maple glazed carrots
Friday: Breaded Chicken cutlet, pink beans and rice, salad and avocodo (SS is dying for some puerto rican food  )
Saturday: Going to RI, Boyz will have to fend for themselves!!
