Menu Thread 6.8.14
Sunday- Going to our friend's house for a doggy 1st birthday party!
Monday- Grilled chicken topped with salsa
Tuesday- Shrimp stir fry
Wednesday- ST Buffalo turkey burgers with blue cheese broccoli slaw
Thursday- Broiled salmon and asparagus
Friday- Caprese quinoa bake
Saturday- Meeting friends to 'tailgate' before the Daughtry concert. They're bringing cold cuts and rolls, I'm making cold tortellini salad and spinach dip in a bread bowl.

My menu got mixed up last week and I lost a day somewhere.
Sunday: Greek day.. Greek omelet for lunch and Greek souvlaki with homemade tzatziki sauce for dinner
Monday: whole wheat calzones
Tuesday: turkey burgers with sweet potatoes and roasted tomatoes
Wednesday: tofu stir fry with vegetables and rice
Thursday: Hawaiian chicken with rice
Friday: Pasta something
Saturday: Buffalo chicken burgers
My menu also depends on what is going bad in my fridge or on the verge of going bad.

Sure! This is the recipe I'm using:
Caprese Quinoa Bake
This is the first time I'm making it so I can't guarantee that it's good..but it looks delicious!

Sure! This is the recipe I'm using:
Caprese Quinoa Bake
This is the first time I'm making it so I can't guarantee that it's good..but it looks delicious!
That is gorgeous! I would love to know how it turns out. It would be a great vegetarian option for a party we have coming up.

Sunday- Ravioli with sauce and garlic bread and peas
Monday- Chicken and rice skillet with broccoli
Tuesday- Sausage and peppers, italian bread, salad
Wednesday- Tamale Pie with corn
Thursday- leftovers
Friday- homemade pizza
Saturday- birthday party, we'll probably have leftovers afterward if we're hungry
Sunday- Heading to a winery for Father's Day! Hopefully we'll grab something yummy before heading home.

Sunday and Monday: away Tuesday: Zucchini Carbonara Wednesday: Surf and Turf (Grilled Hanger Steak and Grilled Shrimp) with a side salad Thursday: Piri Piri Chicken with grilled veggies Friday: Vidalia and Fig Marinated Grilled pork tenderloin with a veggies side salad (not sure yet) Saturday: probably out or if it isn't too hot, I might try a Porchetta recipe I've been eyeing...

Monday: pesto pizza grilled cheese sandwich for DH, pizza for DS from track event
Tuesday: finally made the turkey meatloaf, maple glazed carrots, oven roasted corn on the cob, cauliflower mash
Wednesday: whole wheat rotini with turkey sausage
Thursday: Wednesday left overs
Friday: grilled sandwiches or salad for DH and I???, make and bake pizza I got at Aldis for DS
Saturday: DS's graduation probably do an early dinner

Crazy week...
Last night: Chicken noodle soup and grilled cheese
Tonight: Grilled chicken stuffed with roasted red peppers and fresh mozz
Tomorrow: Having DH's parents over for dinner. Grilled asparagus, mashed potatoes and meatloaf
Friday: Going away for a long weekend

I decided to try the 17 meals from one roast chicken menu plan I found online last week! Each meal uses leftover chicken as follows and is a healthy recipe!:
Mon: Roast chicken with potato and carrots
Tues: Using leftover chicken, chicken picadillo with jasmine rice
Weds: White chicken chilli
Thurs: Sesame Noodles with chicken
Fri: Out for pizza
Sat: chicken curry in a hurry
Sun: Father's day BBQ!

Insane week for us...
Monday - I was travelling...whiskey and ginger ale and some roasted chickpeas lol
Tuesday - went out to his parents' house...dahl, rice, aloo with peas, begun and tomato dish.
Wednesday - back to regular life! Spaghetti with a spicy tomato-basil sauce, salad
Thursday - TJ's harvest grain blend, and I'll add eggplant, zucchini and tomato to bulk it up
Friday - probably just grab a slice, we have errands to run
Saturday - having a few friends over for some grilling...nothing big.

I decide what I'm making on Friday and I run it past DH that night. We usually go food shopping on Sunday so I make sure I buy everything I need for the week. Then, depending on what time I'm going to get out of work, I'll either prep everything the night before or just do it when I get home.
I'm a neurotic planner when it comes all aspects of my life so I actually enjoy planning our meals in advance. Lol

I can't stand going to the store more than once a week so I need to plan. I check the circulars first and make a list from that. Then I come up with my menu based on what's on sale and add anything I need for those meals to the list. It takes some time but it takes a lot of stress off for the rest of the week. I can't say the plan always works out but it definitely helps.

i learned last week at a money saving event that i should plan my meals then shop. i go through my cabinets and freezer and decide what to eat. sometimes themes such as taco tuesday, meatless monday, and breakfast for dinner. also i look at other menus on here.

I think part of the my problem is that I don't have enough recipes or good meal ideas. it sounds like dinner time at all your homes is fab. I make chicken and same thing all the time. I don't want to cook a meal that requires me to buy lots of extra spices and herbs..or requires lots of extra ingredients. Perhaps a few recipe exchanges it what I need??
