Menu thread 9-30-12
Tonight- Zorn's leftovers (turkey/stuffing/gravy, sesame chicken,mashed sweet potatoes, creamed spinach, etc.)
Monday- grilled chicken panninis with roasted peppers, fresh mozz & balsamic glaze with tortellini soup
Tues.- Cook's Illustrated Shepherd's Pie
Wed.- Braised Chicken Breasts in Tasty Mirepoix Ragout (allrecipes) with egg noodles
Thurs.- not sure yet
Fri.- Take out

Saturday - Chicken w/ peas & pancetta in a marsala wine sauce w/ baby spinach & rice
Sunday - Ravioli's w/ sauce & meatballs, Eggplant Parm, salad
Monday - Empanada's, Rice & Beans and Plantains thanks to my SIL's Momma!!!
Tuesday - I'm trying the Mississippi Roast! Roasted Acorn Squash & Garlic Mash!
Wednesday - Pork chops, and not sure what sides

Sunday: leftover from last night, white chicken enchiladas with rice, found on pintrest - these were really good!
Monday: Barefoot Contessa's Turkey Meatballs and penni with marinara sauce
Tuesday: Chicken Cutlets with Broccoli and roasted potatoes
Wednesday: Turkey Meatball Parm Heros
Thursday: Sausage & Peppers
Friday: Ribs with asparagus and corn bread

Sunday: Dinner at IL's
Monday: Angel hair pasta with garden sauce and peas, homemade garlic herb bread, house salad.
Tuesday: Breakfast pizza topped with eggs, tomatoes, roasted peppers and onion for me.. topped with eggs. turkey bacon & light links with cheddar for the boys. Fresh fruit salad, orange juice
Wednesday: Coconut curry soup with Tempeh for me and the boys. Potato leek soup for the Rob (he HATES coconut). Herb bread, field greens with Green Goddess dressing.
Thursday: Chicken w/dumplings for the boys. leftovers for me.
Friday: Sauteed Brussels sprout leaves, quinoa and wild mushroom pilaf, glazed carrots.
Saturday: Crispy skinned salmon, sweet potato wedges, Sauteed Spinach with lemon.

Monday- seared tuna with wasabi mayo and roasted pumpkin and a side salad
Tuesday- zucchini lasagna
Wednesday- Creamy black bean salsa chicken
Thursday- honey ginger glazed salmon with side salad
Friday- ST chicken parm with side salad
Saturday- not sure yet.
Sunday- duck breast with blueberry port wine sauce with roasted veg (whatever is good at the market; hoping to findbrussels sprouts).

Monday-Asian noodles with shrimp
Tuesday-Turkey breasts and an array of sauteed vegetables
Wednesday-Baked sea scallops with whole wheat breadcrumbs and a side of mashed sweet potatoes
Thursday-Spinach and mushroom whole wheat lasagna

Menu thread 9-30-12
Saturday: Mississippi Roast over buttered egg noodles, candied carrots and homemade garlic biscuits.
Sunday: 1770 House Meatloaf recipe, mashed potatoes and creamed spinach.
Monday: Red wine braised chicken with zucchini, mushrooms and shallot. Baked sweet potato.
Tuesday: Leftover meatloaf, buttered peas and hasselback potatoes.
Wednesday: Jerk chicken with yellow rice and beans.
Thursday: ST Zucchini lasagna, arugala salad.
Friday: Buffalo chicken burgers topped with shaved celery and blue cheese dressing. Sweet potato tots.

Monday - Barefoot Contessa's shrimp scampi over linguine, mixed greens salad
Tuesday - Paninis with fresh mozz, basil, sliced roma tomatoes and balsamic glaze
Wednesday - ST Baked Chicken Parmesan, steamed broccoli
Thursday - BLTs with avocado on toasted sourdough, sweet potato chips
Friday - crockpot ribs, cole slaw, corn bread

Thanks! I made the pumpkin bars for my neighbor as a thank you for taking in our packages while we were away - but this recipe is made in a jelly roll pan so there was a ton and we kept half of them. Here is the recipe. They came out really good. Definitely not healthy LOL
