Mini cheese cake recipe?
Found a few online but wanted to see if anyone here had a good recipe?
ETA: This is the recipe I found online. Does it sound right?
-vanilla wafers (or graham crackers) crushed at bottom of mini baking cup -2 - 8 oz. packages of cream cheese, softened -1/2 c. sugar -2 tbs. flour -2 large eggs -1 tsp. vanilla extract
Bake at 325 for 25 min.
Top with pie fruit filling when cooled.

I use this one: CRUST: * 1/3 cup graham cracker crumbs * 1 tablespoon white sugar * 1 tablespoon margarine, melted FILLING: * 1 (8 ounce) package cream cheese, softened * 1/4 cup white sugar * 1 1/2 teaspoons lemon juice * 1/2 teaspoon grated lemon zest * 1/4 teaspoon vanilla extract * 1 egg
The recipe is for a muffin tin - 325 degrees for 25 min.
I make it in my mini-muffin pan so I bake it for like 12 min or so. Then I take jam and put it in the micro for 30 seconds (apricot, strawberry, peach) and spoon on top. OR put choc chips on them as soon as I come out.
I love this recipe

I can't find the recipe I use, but this sounds like it. I like the Nilla wafers on the bottom.
