Mine have been coming out flat recently too, I think it's because the baking soda is old.

Re: my chocolate chip cookies are coming out flat
My DH swears if you put the batter in the fridge and let it get cold, the cookies don't get flat ........I guess it works, b/c using the EXACT same recipe, mine are flat as a pancake and his are fabulous looking !! -

I believe the amount of butter/margerine can make your cookies flat. I think more = flatter. Alton Brown explained it way better.

i put the batter in the fridge before baking too! i think it does help.... also make sure you use cool cookie sheets (run them under cold water between each batch)

This is the second time I've heard this in one week. I will have to try the cold water trick.

Re: my chocolate chip cookies are coming out flat
3 things......
replace the baking soda/powder, if you don't know how old it is....
definitely chill the dough. I always chill 1 hour prior to baking
if both don't work, and you're using a new recipe, cut the butter/fat...... I cut the butter in my recipe by about 40%, and my cookies went from chewy and flat to fluffy/bumpy/soft (the way I like them)
you don't have to wet your cookie sheet.... if you bake your cookies on parchment, you'll get a little bit of insulation between the sheet and the cookie, and it will prevent melting before it goes in the oven....

Me too, I had never heard that before.
ETA: DH is going to kill me after all of the chocolate chip cookie experimentation I'm planning to do! The people at work though will be happy since they'll get some too!

Re: my chocolate chip cookies are coming out flat
you should also try adding more flour. I am famous for my chocolate chip cookies ( ) and I find that the humidity really impacts the fluffiness. When I find my first batch is coming a little thin, I add more flour. Usually works like a charm.
Happy baking!
