My diet during the 90 pound weight loss....

I have received many FMs, emails and questions about how I am in the midst of my 150 pound weight loss. I figured it was best to write out some ideas for meals and people can modify how they like it. I began this diet under the supervision of doctors and a nutritionist, so I will never say that this is best for everybody.

I mainly eat off of the South Beach Diet principles, but have branched out to others. I don't necessarily have too many recipes (because I completely suck at cooking.) I will write out certain things that I have enjoyed throwing together. I typically make MANY portions at once and freeze them for use later.


Chicken: All of my chicken ideas are boneless, skinless breast chicken that is cut into bite sized pieces. Since I saute with liquid already in the pan, no need to add oil.

Buffalo chicken:
Saute bite sized chicken in a little bit of Smart Balance Spread. Add Red Hot to taste during the saute process. Can use this over a bed of romaine and spinach, or put it on a whole wheat tortilla, or put it over a bed of brown rice. (Can add some Red Hot to the rice)

Garlic and soy chicken: (Brocolli optional)
Saute bite sized chicken in a pan with lite soy sauce. While cooking, add finely chopped garlic or garlic powder. Serve over a bed of brown rice. (Can also add the garlic and soy sauce to the rice after cooking.) Add in some steamed brocolli and mix it all up. All of these flavors mix well into one pot. Add some pepper to taste.

Pork chops: Pork chops are baked in oven til thermometer says they are done. (Typically 375 for about 30 minutes) Put a teeny bit of Extra Virgin Olive Oil in baking dish before adding chops, just so they don't stick. Can add some sliced apples before baking. mmmmmmmm. So tasty! Add a little bit of salt and pepper to taste before baking.

Garlic and soy pork chops:
Before baking, add lite soy sauce and chopped garlic to chops.

Tacos and Taco Salad
Brown ground turkey (I'd suggest the ground turkey that is 93% fat free instead of 99% fat free because it tastes more like ground beef, but that's your call.) and follow directions on your taco seasoning packet.

Add your taco meat onto whole wheat tortillas and add some fat free or reduced fat shredded cheese and whatever toppings you like (within reason for weight loss Chat Icon )

Or add your taco meat onto a large bed of romaine lettuce and baby spinach and add fat free or reduced fat shredded cheese. (I am a big fan of using Red Hot as my taco salad dressing, but you may like something else.) I typically make a HUGE salad that is only 350 calories. Chat Icon

Breakfast:

Egg Beaters (They have store brand that is much cheaper) or egg whites, scrambled. I typically use a cooking spray to coat my pan, so they don't stick. Add veggies to the scramble while cooking. Add a side of turkey bacon or sausage.

Can also pre-cook some egg beaters or egg whites into sandwich size patties and freeze them. Add them onto lite whole grain english muffins, maybe a slice of fat free cheese, maybe add some turkey bacon or sausage.

Veggie Quiche cup: It is easily frozen and microwaved in a minute for a quick meal on the go. If you'd like that full recipe, let me know through FM. I don't have it on me right now. Its main ingredients are egg beaters, frozen spinach and shredded cheese.

Dessert

Think sugar free!!

I love sugar free chocolate pudding! I add a little sugar free or fat free cool whip and have a party! For even less calories there is also sugar free jello.

Recently they also put out a whole box of sugar free creamsicles, fudge pops and popsicles. For 30 calories or less it really haleps my cravings for something sweet! It's hard to find the box with all 3, but I have found them at Stop n Shop.

Tips!
-Always have something to munch on that is low in calories.
-Pack your own lunch for work.
-If you are heading out for errands: Pack a sandwich or something else that you can carry with you. That way you aren't tempted to go through the fast food drive-thru.
-Write down everything you eat and keep track of calories. I try to average 1400 calories per day.
-Drink lots of water!!!!!!
-Watch how many calories you drink per day! (Soda, alcohol, etc.)

Foods to make an easy change:
Pasta: Barilla Plus
Bread: Whole grain or whole wheat (They even have light, with less calories)
Veggies and fruits: Make an effort to eat them with every meal and snack

Thar is amazing. It is so hard. I've lost 50 lbs since having my son last year. Now I seem to have gotten stuck.DH and I are going to star Southbeach. You are an inspiration. I'd like to lose 40 more lbs.
