My House Smells So Good Right Now..
I've had my soup on most of the day in the slow cooker ... but suddenly that heavenly, homey scent is starting to seep out of the pot and penetrate all the little corners of the house. Both my boys just came in and said "That smells sooo good! Can we eat NOW??"
I'll be serving Chicken Soup with a wild rice blend. We'll have a big salad made from the stuff I got at the farm stand today - a big head of lettuce, a sweet onion, a couple of Asian cucumbers, a purple pepper and some thick, red Roma tomatoes. I may even make some croutons because I'm in a good mood. And I got the nicest looking loaf of bread from the bakery - it has a thick golden crust and lots of sesame seeds hiding a fluffy, white interior. In case you can't tell.. I'm sorta looking forward to supper.. just a little!
There's just something about the thought of warm soup on a rainy day that appeals to me.. the onion and celery - the little chunks of carrot. I love the seasonings too - tearing the pieces of sage - stripping the rosemary and thyme. The lucky bay leaf..
What are y'all having for your gray Saturday Supper??

I have a pot roast with carrots, celery, potatoes and onions, and garlic in my crockpot....
ITs been on for 4 hours so far and it smells heavenly in my house..its just the past hour or so that the beauitufl homey smell started...mmmm...and its another few hours before we can even dig in! mmmm
Never made it before, but it smells divine!

EASIEST thing in the slow cooker!
Roughly chop 1 onion and throw it in the bottom of the crockpot. Put a whole chicken on top. add 2 broken up carrots and a broken celery stalk or 2 (with leaves). Strip a few stalks of thyme and a stalk of rosemary and put that in the pot. Tear up 2-3 leaves of sage and add them. Add Bell's Poultry seasoning, about a tablespoon of chicken base and some fresh ground pepper. Pour homemade stock - or canned stock - over the chicken until it comes over it. Put in your Bay leaf for good luck.
Cover and cook however long you need.
About 45 minutes before I'm ready to eat I fish out the chicken (it's not easy because it breaks apart as you pull it out) and the big chunks of carrots and celery. I add about a cup of chopped baby potatoes, 2 carrots sliced up - or a handful of baby carrots and a nicely chopped stalk of celery. I pull the meat off the chicken and add it back to the pot and let the potatoes get tender. This is a good time to correct the seasonings and add more salt, pepper or chicken base as needed.
I make the rice - or noodles - seperately so they don't blow up and soak up all the good broth. When serving I put a little rice or noodle in a bowl, ladle the soup over the top and garnish with lemon and some parsley.
It changes each time I make it.. sometimes I add more base, less pepper - no sage, more thyme, etc.. But those are the basics!

OMG - and you are so pregnant! I feel soooo bad for you!
Will it make you feel better if I tell you that I made waffle ice cream sandwiches for dessert?? Strawberry ice cream, bananas and chocolate syrup.. yum!

That soup sounds delicious! I made Ropa Vieja in my slow cooker yesterday and we had rice and beans on the side. The plantains weren't ripe enough so I also made banana fritters on the side. DH loved it and we have enough leftovers that I can send it to daycare for DS on Monday!

I love that as well on rainy days...it's so comforting and homey.
Lastnight, DH made homemade apple crisp......the smell of it took over the entire house. Sooooo good!

Here's the recipe:
Ropa Vieja Slow Cooker Recipe
Serves: 9
2 tablespoons vegetable oil 3 pounds beef flank steak 1-1/2 cups beef broth 12 ounces canned tomato sauce 2-3 medium onions, sliced 1 large green bell pepper, seeded and sliced into strips 1 large red bell pepper, seeded and sliced into strips 6 cloves garlic, mashed or minced 1 (6 ounce) can tomato paste 1/2 teaspoon dried oregano 1/4 teaspoon cayenne pepper 2 teaspoons chili powder 1/2 teaspoon chipotle powder or mexican chili powder 2 teaspoons ground cumin 3 tablespoons chopped fresh cilantro 2 tablespoons olive oil 1 tablespoon and 1-1/2 teaspoons white wine vinegar 2 bay leaves Crushed red pepper flakes (as much or as little as you want)
1. Heat vegetable oil in a large skillet over medium-high heat. Brown the meat on all sides. 2. Transfer meat to slow cooker. Pour all other ingredients into slow cooker. Stir until well blended. 3. Cover and cook on low for up to 10 hours. At 8-9 hour mark, check to see if meat is fork tender. If necessary, rotate the meat upside down and continue to let simmer in crock pot until fork tender. 4. When ready to serve, pull meat out of slow cooker and shred with two forks. Return shredded meat to slow cooker. 5. Serve with tortillas or rice/beans on the side.

Notes: DH couldn't find flank steak so we used an eye of round roast that was tied in rope.
I love cilantro, so I threw in a huge handful and didn't really measure it. I'm pretty sure I used more than 3 tablespoons.

Let me know how it turns out! It makes a ridiculous number of servings, so we're freezing all the leftovers to use later!
