here is my zucchini bread recipe. I have never made them into muffins but i am sure that they will be great. You could always just omit the walnuts or ground them up. HTH Image Attachment(s):

Jessica Seinfeld's cookbook "Deceptively Delicious" has tons of recipes for incorporating vegetables into everyday meals. The vegetables are pureed so you dont get any conspicuous veggie chunks in the food.
There is one muffin recipe that uses applesauce and either 1/2 c of butternut squash or carrot puree.

Carrot-Corn Muffins
1 cup plain yogurt ½ cup milk 2 eggs 1 TBSP honey 1 TBSP canola oil 2 ¼ cups cornmeal ½ tsp baking soda 1 tsp baking powder 1 tsp sea salt 1 cup grated carrots (2 to 3 carrots)
Preheat oven to 375 degrees. Oil baking tins. Beat together yogurt, milk, eggs, honey and oil until smooth. In separate bowl, whisk together the cornmeal, baking soda, baking powder and salt. Add yogurt mixture and carrots to cornmeal mixture. Stir just until mixed. Pour into prepared baking tins. Bake for 20 minutes, or until a knife inserted in center comes out clean. Yield: 1 dozen.

Apple Carrot Muffins
1 3/4 cups raisin bran cereal 1 1/4 cups all-purpose flour 3/4 cup sugar 1 1/4 teaspoons baking soda 1 teaspoon ground cinnamon 1/4 teaspoon salt 1 egg 3/4 cup buttermilk 1/4 cup canola oil 3/4 cup finely chopped peeled tart apple 3/4 cup grated carrots 1/4 cup chopped walnuts
DIRECTIONS In a bowl, combine the first six ingredients. In a small bowl, beat the egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple, carrots and walnuts. Fill paper-lined muffin cups or cups coated with nonstick cooking spray three-fourths full. Bake at 400 degrees F for 20-23 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
Zucchini Yogurt Muffin 1 1/2 cups all-purpose flour 3/4 cup whole wheat flour 3/4 cup oat flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 2 1/2 teaspoons ground cinnamon 1/4 teaspoon ground nutmeg 3 eggs 1/2 cup vegetable oil 1/2 cup unsweetened applesauce 1 cup plain yogurt 1/2 cup white sugar 3/4 cup honey 2 teaspoons vanilla extract 1 cup shredded zucchini (drained) 1 cup shredded carrots 1/2 cup chopped pecans (optional) 1/2 cup raisins (optional)
DIRECTIONS Preheat oven to 400 degrees F (200 degrees C). Lightly grease 24 muffin cups. In a bowl, sift together the all-purpose flour, whole wheat flour, oat flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In a separate bowl, beat together eggs, vegetable oil, applesauce, yogurt, sugar, honey, and vanilla. Mix the flour mixture into the egg mixture. Fold in the zucchini, carrots, pecans, and raisins. Scoop into the prepared muffin cups. Bake 18 to 20 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before transferring to wire racks to cool completely.
