Any Bakers out there? - updated to add carrot muffin recipe on 11/20/06

I just dug up my old binder with my yummy family baked recipes in it to post for skygirl, and I'm reminded of all of the family baked goods that I love to make and EAT!

How about we post a thread of our favorite baked recipes! Muffins, breads, cookies, cakes, etc.

I'll cut and paste my Banana Bread recipe and work on getting some other ones type up as well!

This is the recipe for my Banana Bread -- which a lot of people RAVE about!

3/4 c. sugar
1 1/2 c. mashed bananas (3 large)
1/2 c. oil (i use canola and you can use applesauce too)
2 eggs
2 cups all purpose flour
1/2 cup chopped walnuts (optional)
1 teasponn baking soda
2 teaspoons vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt.

heat oven to 325

grease a loaf pan with shortening or margarine (i spray with pam)

mix all ingredients in a large bowl. start with dry and add oil, bananas, eggs, vanilla and walnuts.

bake for 70-80 minutes. test with a cake tester or wooden pick in the center of bread. let cool for at least 10 minutes before serving.

makes one loaf.

also sometimes I add chocolate chips to this and it's great too!

do the bananas need to be over ripe or can they be yellow?

I usually use overripe bananas -- or put them in the freezer -- it browns them right up.

My favorite tip for making banana bread, since I've made this recipe probably close to 50 times or even more is to put the bananas in a ziploc bag, mash em all up in there with your hands, then cut the tip of the bag and squeeze the mashed bananas into the mixture. My mom mashes in a seperate bowl with a fork and it takes forever!

I also have a great zucchini bread, pumpkin bread (OMG SO GOOD!), cinnamon jumbles which are almost scone looking but very soft and SO delish, marshmallow cloud chocolate cookies (I call them rocky road cookies bc I add walnuts) and my mom's "Scrumptious Blueberry Muffins."

I could also dig up my farina muffins (One of my all time favs) my mom's crumb cake or pineapple crumb cake, my mom's blueberry cake...

seriously so many. every saturday my mom baked. so we've got a TON of family recipes. My mom's entire "Gil" side of the family are all bakers.

My "Delicious Pumpkin Bread"

Makes 3 medium loaves -- freeze well or give as gifts/bring to thanksgiving and fall parties.

3 1/4 c. all purpose flour
2 teaspoons baking soda
1 teaspoon ground nutmeg
2 cups solid pack pumpkin puree
1 cup veg oil (I use canola)
1/2 cup chopped walnuts (optional or you can use raisins -- or both)
1 1/2 teaspoons salt
3 cups white sugar
2/3 cups water
4 eggs.

grease and flour 3 7X3 inch pans. preheat oven to 350.

Mix dry ingredients first, fold in wet ingredients

bake for approx 1 hour or until cake tester/wooden stick comes out clean!

YUM YUM!

Zucchini Bread makes 2 8X4 loaves

3 eggs
1 cup veg oil (i use canola)
2 cups white sugar
2 cups grated zucchini
2 teaspoons vanilla extract
1/2 cup chopped walnuts
1 teaspoon salt
1/4 teaspoon baking powder
3 cups all purpose flour
3 teaspoons ground cinnamon

preheat oven to 325. grease and flour 2 8$4 inch loaf pans

beat eggs until light and fluffy in a large bow. mix in oil and sugar. stir in zucchini and vanilla. combine flour, cinnamon, soda, baking powder, salt & nuts and stir into the egg mixture.

bake for 60-70 minutes or until cake tester comes out clean.

My mom's "Scrumptious Blueberry Muffins"

She'd probably kill me if she knew I was sharing this over the internet but it was published in a community cookbook so it won't be the first time she has shared it.

Batter:
1/2 c. sugar
1/4 c. (1/2 stick) butter or margarine room temperature
1 egg
1 3/4 c all purpose flour
1/2 c whole wheat flour
4 tsp baking powder
1/4 tsp salt
1 c. milk
1 tsp vanilla
1 1/2 c. fresh blueberries, rinsed and drained

in mixing bowl cream together sugar and butter until fluffy. beat in the egg. mix together flour, baking powder and salt. add dry ingredients to the creamed mixture afternately with the milk. , beginning and ending with the flour mixture. add vanilla and beat well. gently fold in blueberrys when you have everything else mixed well so that you don't break them apart.

crumb topping:
1/2 c. sugar
1/2 tsp. cinammon
1/3 c. all purpose flour
1/4 c. (1/2 stick) cold butter or margarine

in small bowl mix all ingredients with fork until crumbly. sprinkle over muffins. bake in 375 oven for 20-25 minutes or until golden brown. serve warm.
makes 12 large or 18 medium muffins (my mom always doubled the recipe)

Jessica's Marshmallow Clouds (From My Mrs. Field's Cookie Cookbook)

I call them Rocky Road cookies because I sometimes add crushed walnuts to the recipe.

3 cups all purpose flour
3.4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1 cup granulated sugar
1 cup packed light brown sugar
2 sticks (1 cup) salted butter, softened
2 large eggs
2 teaspoons vanilla extract
12 ounces mini semisweet chocolate chips (about 2 cups)
8 ounces mini marshmallows, frozen (very important that they are frozen)

i also add probably 1/2 cup chopped walnuts but i don't measure--just eyeball it.

preheat oven to 350

keep the marshmallows in the freezer until you are ready to add them

combine flour, cocoa and baking soda in med bowl, set aside

combine sugars in a large bowl, using electric mixer blend in butter, scrapingd down sides of the bowl. add eggs and vanilla and beat at the medium speed until light and fluffy.

add the flour mixture and chocolate chips. blend together at a low speed until combined. batter will be very stiff.

gather 4-5 frozen marshmallows in the palm of your hand and cover with a heaping tablespoon of dough. wrap the dough around the marshmallows, completely covering them to make a 2-inch diameter ball.

place on ungreased cookie sheets 2 inches apart and bake 10-12 minutes. cool on pan for 2 minutes and then transfer to a cool, flat surface.

THESE ARE AMAZING! You open them up and marshmallow goo comes out of them! Everyone always LOVES them!

Makes 3.5 dozen cookies

Ironically, this is hte 1st week dh & I finished all of our bananas before the were over- ripe. I guess my attempt to make banana bread will be next week.

Award Winning SOft Chocolate Chip Cookies ( got the recipe from allrecipes.com in 2001 and they are the only choco chip cookies I make now. They stay soft because of the pudding in the batter)

6 dozen cookies

4 1/2 c all purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 c packed brown sugar
1/2 c white sugar
2 (3.4 ounce) packages of instant vanilla pudding (you can use chocolat to make chocolate choco chip cookies or any other flavor to get creative and change it up)
4 eggs
2 teaspoons vanilla extract
4 cups semisweek chocolate chips
2 cups chopped walnuts (optional)

preheat oven to 350
sift together flour and baking soda, set aside

in large bowl cream together butter, brown sugar white sugar. beat in the instant pudding mix until blended. stir in the eggs and vanilla. blend in the flour mixture. finally stir in the choco chips and nuts.

drop cookies by rounded teaspoonfuls onto ungreased cookie sheets

bake for 10-12 minuts or until golden. edges should be golden brown.

keep in tupperware and they'll stay super soft and chewy for as much as a week and a half.

Cinnamon Jumbles (My DH HATES baked goods but loves these "cookies" and also takes them into work with him and they get stolen from all of his co-workers. They are an OLD OLD OLD family recipe going back 4 generations now)

2 1/2 c flour + 1/2 scoop (this is my grandma's recipe so 1/2 scoop is usually just under 1/2 cup -- I have one of the scoops she used!)
1/2 teaspoon baking soda (heaping)
1 egg
1 1/2 teaspoon vanilla
1/2 cup oleo (I use margarine, oleo is old school)
1 c sugar
2 cups sour cream

sift together dry ingredients. cream sugar and margarine and add egg,vanilla and sour cream. to this mixture add flour and blend well.

chill dough and drop by rounded teaspoonfuls on greased cookie sheet. sprinkle with 1/2 cup sugar and 1 tsp cinnamon (we always keep large amounts of this premixed in a salt shaker in our house because it's also good to make cinnamon toast)

bake at 400 for 8-12 minutes.

if you don't chill dough you'll need to add more flour since it should be a pretty stiff dough.

this recipe is from betty crocker 1958 and adapted by my grandmother.

my mom also used to add blueberries to this when I was very little since her blueberry muffins were too big for me -- just gently fold in 1 cup of rinsed blueberries before baking.

The crumb cake I actually don't have in my binder but I'll call my mom tonight to get the recipe. I think the crumb topping is the same as the one in the blueberry muffins since I think she just decided to add it to the muffins one day when she made extra crumbs. But I'll get the whole recipe, and also the version that has pineapples in it!
