Need an excellent recipe for pork roast for dinner tonight

I bought a nice pork roast for dinner tonight, and I never made it before. Anyone have any great recipes to share? Also, what sides to make? TIA!

My DH makes an awesome one. He brines it in applejuice salt and water. He cooks it on a charcoal grill over indirect heat and roasts about 20 mins per lb. The internal temp should be about 145 when you pull it. Let rest for 15 mins and good to go! You can also cook this in your oven around 350 but sear it in a hot pan first

My mom always just puts it in an oven bag with a packet of onion soup mix. It's really good - I ran out of bags so I baked it in a covered dish with the soup mix so it didn't dry out.

You can also do this in a crockpot and carrots are delish cooked in the meat like this.
