Need Awesome Apple dessert recipe (not pie)
Tomorrow we're going to MIL's for Thanksgiving. I usually get pies from work to bring, but MIL said to pick up a birthday cake for FIL (his bday was a week ago but we didn't celebrate)...but I feel I need to bring something else. They aren't much for really sweet, (yummy) chocolate stuff, so I'm going the apple route.
I have a fallback apple crisp recipe, but looking for yummy tested apple cake or muffins or tortes or such.

I have also made the apple dapple and that is yummy... I also have an apple cake that isnt super rich... I just have to find it... but in the meanwhile, this may be a good option and it is easy and delicious!
TRIFLE: 1 pound cake(entemann's sarah lee, I used stop and shop brand--found a little loaf in bakery section), strawberries, blueberries, bananas, 1 container cool whip, lemon juice, 1 package instant vanilla pudding, 1 package sour cream Cube pound cake, set aside. Chop strawberries, bananas into slices. Prepare instant pudding according to directions, let set in fridge a few minutes til thick, then combine pudding with sour cream. Fold that into cool whip. Then you just layer your cool whip mixture, pound cake, and fruit until you have no more. I started with pound cake on bottom (one layer of pound cake to cover the trifle bowl, then strawberries, then cool whip, then repeated with other fruit). You can prepare this the night before and put in fridge, that's what i dd. I brushed the bananas with lemon juice so they didn't brown. The first time you do this you will probably be so careful doing the layers and making it pretty, the more you make it you will see it always looks and tastes amazing anyway you layer it and you can use any fruit you like,

Cinnamon Apple Cake
• 1 3/4 cups sugar • 1/2 stick margarine, softened • 6 oz. block cream cheese (1/3 less fat– about 3/4 cup) • 1 tsp. vanilla • 2 large eggs • 1 1/2 cups flour • 1 1/2 tsps. baking powder • 1/4 tsp. salt • 2 tsp. cinnamon • 3 cups chopped & peeled Rome apples (about 2 large)
• Preheat oven to 350° & coat 8-inch spring form pan with cooking spray. •Beat 1 1/2 cup sugar, margarine, vanilla & cream cheese at medium speed until well blended. • Add eggs, 1 at a time, beating well after each one. • In a separate bowl, combine flour, baking powder & salt. • Add flour mixture to cream mixture— beat low. • In a separate bowl, combine 1/4 cup sugar & cinnamon. •Mix 2 TB of sugar mixture & apples, then stir into batter. • Pour batter into spring form pan & sprinkle with remaining sugar. • Bake at 350° for 1 hour & 15 minutes, or until cake starts to pull away from sides of pans.
Apple-Cinnamon Upside-Down Cake • 10 TB unsalted butter, room temp • 3 apples (empire or gala), peeled, cored and sliced into 8 wedges • 1/2 light brown sugar • 1 TB fresh lemon juice • 1 1/2 cups flour • 1 1/2 tsp baking powder • 1/2 tsp salt • 1/2 tsp cinnamon • 1/2 cup white sugar • 2 eggs • 1 tsp vanilla • 1/2 cup milk
• Preheat oven to 350° • Coat bottom of 9-inch round cake pan with 2 TB butter, then sprinkle with the brown sugar. In a medium bowl, toss the apples with the lemon juice. Arrange apples in the prepared pan in two concentric circles (you may not use all of them). • In a medium bowl, whisk together flour, baking powder, salt and cinnamon— set aside. •With an electric mixer, beat remaining 8 TB butter with white sugar until light and fluffy. Add eggs & vanilla—beat until incorporated. With mixer on low speed, alternately add the flour mixture in three parts and the milk in two, beginning and ending with flour mixture. • Spoon batter over apples in pan— smooth top. Bake until a toothpick inserted in the center comes out clean, about 45-55 minutes. Cool cake in pan on a wire rack at least 30 minutes. If cake has risen above an, simply push back inside rim. • To serve, run a knife around edge of pan, and invert cake onto a platter.

Thanks ladies, I ended up making the apple dapple cake & it looks super yummy. I'll let you know how it tastes/goes over later.
