Need dinner suggestions.....
we're having breaded chicken cutlets....
I need new side dishes...I'm so bored with what I normally make.
Note: we do love those Lipton sides in the pouch...if there were a way to make them from scratch....

Do you like asparagus? DH is no-carbing it right now, so I'm restricted to the veggies I can make and I get tired of finding new ways to doctor up cauliflower/broccoli and spinach! Sometimes for a change I make grilled asparagus. Put it on a cookie tray, drizzle olive oil, salt, pepper, garlic powder and cook under the broiler. Just before it's done, I sprinkle some parm cheese on it. DH loves it and it changes up the veggie selection for him.

I did something similar with zucchini and it came out very good.
You could also slice tomatos and layer them with a little dab of pesto sauce and drizzle with olive oil and serve the chicken over that.

cous cous with garlic, oil, spinach and parmesan cheese. It is awesome! Kinda has a risotto feel to it. Just don't buy the stuff in a box, make it yourself it is WAY better. I would get the loose cous cous from whole foods or a natural foods market.

corn on the cob - steamed for 2 minutes
2 cloves garlic chopped and 1 tablespoon olive oil, heat in a large pan then add a bag of clean spinach- sautee until soft
steam broccoli - add parm cheese and red pepper flakes
put broccoli in a broiler with parm cheese on top
couscous - takes 5 minutes (the parmigana one is my favorite)
spinach pie - spray a pie pan, drain 2 boxes of chopped frozen spinach, add 8 oz diet cottage cheese, 2 eggsor 4 egg whites, and 8-10 oz diet shredded cheddar- cook for 20-25 minutes under 400 degrees - so good

I love corn on the cob on the grill. Wrap it in foil.
I also put asparagus on the grill along with red, yellow and orange peppers.

I make rice-a-roni from scratch. You can find Paula Deen's recipe on Food Network's website. It's really good, it uses rice and vermicelli pasta.
We make a lot of rice, I make rice pilaf alot too.
I like roasted baby potatoes with rosemary, salt, garlic and pepper. You can either cut them into rounds, or make them whole and then smash them with some olive oil and garlic. Yum!

With chicken cutlets I always have to have mashed potatoes. For a veggie we do corn, green beans or fresh spinach.

I was going to do chicken cutlets this week but decided to cube them and make them kebabs. I'll add red bell, green bell, onion and tomato to the skewers and probably serve over brown rice or couscous.

I sometimes make a bean salad... use kidney beans, black beans, (really any kind of beans)... some chopped tomato, some chopped peppers, a little onion, and Italian dressing... you can also throw some feta in there...

Love Roasted/Grilled yellow squash.
Slice the squash vertically. (usually 4 slices) Drizzle a little olive oil and top it off with Parmesan Cheese (not the powder). Set it underneath a toaster oven or broiler and cook until cheese is melted. So YUmmy!!
