Need quick, easy, HEALTHY meal ideas please!
DH travels for work so much that his diet is really suffering. He feels unhealthy and his cholesterol has gone up quite a bit.
I am pregnant and on bed rest, but can get up and do things, so dinner has to be quick and easy to prepare.
Does anyone have anything to share? He's trying to stay off of red meat for a while, and we have chicken allllllllll the time - OH, and he's super picky, but I can sneak stuff inif necessary

I just made steamed filet of sole last night....
The steamer consists of filling a large saute pan with about an inch of water, balling up 3 sheets of foil and resting a pyrex dish on top of the foil balls in the water, careful not to touch the water....set it to boil.....
spray the pyrex dish with PAM and lay the filets in.... Top with your choice of spices (salt, pepper, Old Bay, Adobo, etc) I then add a few pats of butter, lemon slices and capers.... When the water boils, place the pyrex on top of the foil balls and cover, steaming for about 10-12 minutes or when the fish is to your liking.
I usually steam some broccoli in the microwave and add a little olive oil and parm and breadcrumbs.....
I also have been loving the Uncle Bens steamer rice packets of already cooked brown rice (chicken flavor is the best). You just pop em in the mic for 90 secs and presto! Dinner is served in about 15 minutes....
