* I steam them with the fold out steamer in a large 'soup pot for about 10 minutes.
l* ay them out on a cooling rack on top of baking pan and dry with a paper towel and put in the fridge for two hours. I also lay the papertoel underneath to catch any extra moisture.
* remove the chicken on the rack from the pan and replace the layer of paper towel and line the baking pan with parchment paper and lay the wings out wihtout touching on the paper
* bake at 450 degrees for 20 minutes on one side flip and bake another 20 minutes-make sure to pre-heat the oven first.
* I usually take a whole jar of franks buffalo sauce and mix with half a stick of unsalted butter and heat it up on the stove....then i take a large covered pyrex bowl and dump all the wings in there and pour the sauce over and shake it up. You can also mix the buffalo sauce with bbq sauce if you like sweet wings.
* They come out so crispy without the house smelling like a deep fryer
