NO-OVEN meals!

What are your favorite summer time meals (INCLUDING side dishes!) that don't require turning on the oven?

Oh and I FINALLY, after 5 years, have a BBQ.. so bring on the BBQ meals too (we have a side-burner on it if that helps) ! Chat Icon

And can someone teach me how to BBQ?? haha Chat Icon

As long as you are willing to BBQ, check out reynold's wrap's website. They have a ton of foil packets you can just stick on the grill

I just made the Skinnytaste quinoa/spinach salad a couple of weeks ago and it was amazing. I substituted oranges for the grapefruit (DH doesn't like it) but I used grapefruit juice in the dressing. I served it with grilled sliced steak.

I know you like to make homemade pizza a lot, we do it on the grill all the time - just brush dough with a little olive oil, cook until done on one side, flip & add toppings. It took me a few tries to get it right but it's worth it.

Chicken gyros - you can marinate chicken in greek yogurt, garlic, oregano and lemon juice, grill and top with tzatziki sauce, l/t/o. Wrap the pitas in foil and put on the top shelf thing of the grill to warm while you're doing the chicken.

Grilled chicken is a STAPLE for us in the summer. It's easy, versatile and can be for more than one meal. I usually like to marinate in a citrus-y type dressing in the summer. I like lime, A LOT of minced garlic, a splash of OJ, a little olive oil and some salt and pepper.. sometimes a little minced jalapeno too. The timing is tricky though.. if you marinate TOO little.. it hardly has any flavor. If you marinate too long it dries out because it's essentially cooking in the citrus juice. To counteract this, I add a little more olive oil than you might think strictly necessary (maybe an extra Tablespoon) and let it marinate for about 3 hours... maybe 4. I usually do a grilled chicken night one (top with cheese and pico a la PW or serve it straight), the next day we'll do chopped salads with lots of veggies and strips of the grilled chicken. The marinade also makes a nice dressing! Just taste and adjust.

the meal i never tire of is chicken and corn. chicken is basic, salt & pepper and corn, either grilled on the BBQ with a chile lime butter or grilled & cut than mixed with black beans, onions, tomatoes, etc for a warm salad.

We are all about grilling right now, but if weather is bad, we make an Italian cold pasta salad, with cheese, olives, red peppers, salami, pasta, etc, with an italian dressing.

I made pasta and broc w/ garlic oil and cheese last night. It was SOOO good. I can't wait to make it again. Hope DS likes it!

I made this two nights ago and it was light and summery, but filling: Spaghetti with edamame, spinach, lemon, pesto

And tonight I'm making Zucchini, black bean and rice skillet I can update tomorrow to let you know how it is!

I found them both via Pinterest :)

We BBQ chicken wings in different sauces and I usually make a coleslaw for the side dish.

We also BBQ marinated chicken and vegetable kabobs and I serve that with rice and a yogurt based dipping sauce.

I also like BBQ-ing hamburgers with corn on the cob and/or potato salad.

DH likes grilling sausages and peppers and I usually make a salad if we have it on rolls or a pasta salad if we have it without bread.

Other no oven meal favorites are:
-chicken fajitas
-buffalo chicken salads
-tacos
-fried fish with different toppings
-paninis

I have been using my crock pot a lot instead of the oven, which heats up the entire house. You can even bake a cake in it! Chat Icon
