one of my favorites is pot roast with veggies. i just put in a 3-4 pound pot roast, chunk up a few potatoes, an onion, and dump in a bag of baby carrots. then, i add some chopped garlic, and some other spices (whatever i feel like that day, basil, thyme, parsley, crushed red pepper) ... i do one cup of water, and one cup of low sodium beef broth. cook it on low for 8 hours, and there ya go the whole meal in one pot AND its just DH and i, so we get 2 meals out of it- so i pack away the lftovers and a few days later i just put them in a dish in the oven for about 10, 15 minutes... it tastes jsut as good as the first night
ETA: another one i do is crock pot chicken caccitore. a couple boneless chicken breasts, a bell pepper, a cubanelle ( slightly spicy) pepper, an onion, a can of crushed tomatoes, some balsalmic and a little bit of crushed red pepper flakes. the chicken kinda shreds up when its done to make more of a stew- so i usually serve it over rice or pasta.

Wendy’s Chile serves 12
Ingredients: 2 pounds ground beef One 29-ounce can tomato sauce One 29-ounce can kidney beans (with liquid) One 29-ounce can pinto beans (with liquid) 1 cup diced onion (1 medium onion) 1/2 cup diced green chili (2 chilies) 1/4 cup diced celery (1 stalk) 3 medium tomatoes, chopped 2 teaspoons cumin powder 3 tablespoons chili powder 1 1/2 teaspoons black pepper 2 teaspoons salt
Preparation: 1. Brown meat in a skillet on the stove 2. Add the rest of the ingredients to crock pot 3. Cook on low for 7 hours
