oven fried zucchini sticks

tried these last night, everyone seemed to really like them


Oven-fried zucchini sticks

pam
1/2 cup whole wheat flower
1/2 all purpose flour
2 tablespoons corn meal
1 tsp salt
1/2 teaspoon pepper
1 1/2 lbs zucchini
2 egg whites

Preheat oven to 475, coat a large baking sheet with cooking spray, combine flours, corn meal, salt and pepper in a ziploc bag. Dip zucchini in egg white shake in bag to coat, arrange, not touching, on the baking sheet. Coat all exposed sides with cooking spray. bake on center rack for 7 minutes, turn over and coat and floury spots with cooking spray. Continue to bake until golden and tender, about 5 mins. Serve hot
