And a rice and bean recipe. I cheat and use Goya for my rice and beans . Though, this recipe doesn't have it, I add green olives to mine. They add a great flavor (I recommend adding them if you like them): Arroz con gandules

i just give the pernil a GOOD RUBBING of sofrito all over, and about 2 envelopes of sazon con culantro y achiote (comes in an orange box) -- my aunt likes to poke holes in the pernil and stick whole garlic gloves in.... cover the pernil and roast at about 350 degrees for about 3-4 hours (depending on size) - basting occassionally uncover during the last 15 mins of cooking time, so the skin gets crunchy
for the beans, I use 1 16 ounce can red kidney beans or pink beans (habichuelas coloradas) 2 Tablespoons of olive oil 2 Tablespoons of sofrito 1 envelope of sazon con culantro y achiote 3-4 pieces of cooked ham, cubed (about a tablespoon) 1/2 teaspoon garlic powder half of a small onion chopped half of a green pepper chopped 1 small can of tomato sauce small potato, peeled and cubed olives (optional) salt and pepper to taste (i wait to add salt because you may not need to add it due to the ham) put the oil and sofrito in a medium sauce pan and simmer. add the sazon, ham, garlic powder, onions, and green pepper and stir. add tomato sauce, beans and potatoes and stir. let simmer for about 1/2 hour on low heat, stirring frequently. serve over white rice.

I score the skin diagonally and rub Sazon over all sides, refrigerate for about asn hour, then cook at 350 for 20 minutes a pound.
