X-post from Recipe board..Spanish rice??

I am hoping someone can help me here.

I want to know how to make white rice but with a spanish flavor. My ex's mom made the best rice ever. It was always orangy in color but when I just use the sazon packet, it turns it orange but doesnt give it the same flavor. There has to be something else in there!

How do you guys make yours? I dont want to add beans or anything else, just rice but with flavor. I am so tired of plain old white rice. TIA.

i think the spice you're thinking of is saffron? it's yellow/orange in color

honestly, I agree- my DH is Ecuadorian and his mom makes her own rice which is delicious, but he enjoys when I make the GOYA kind too- it tastes almost like moms...

However, the orange packet is Sazon-sp? His mom uses that- but she likes to put other stuff in it too most of the time-I can ask Dh when he gets home

you have to use carolina rice
you have to put n sazon with achote
also half an onion diced realy small

same here, i LOVE Goya rice..the Spring version and the black bean and the red bean ones....mmmmmmmm

My MIL's recipe has a lot of saffron in it too. That stuff is expensive! But yes, it gives it a nice color and taste.

I prefer Lipton/Knorr spanish rice. Chat Icon

You have to put it in when its boiling.

The way I make yellow rice is I put in the sazon while the water is boiling, then I add salt, oil and a homemade spanish seasoning called Sofito. My mother makes from scratch. I don't really know what all the ingredients in it because my mom makes it and hands them out to me and my sister ( we put that in everything Chat Icon ) I know you can buy ready made Sofrito at the store in the goya aisle I belive. It comes in a jar.

Double ditto.
You can also make achote oil. Get the seeds and put them in oil on the stove and gently heat them.

Sazon with achote is easier though.

Sofrito!!! That gives you the taste and texture. You can buy it in the Spanish food aisle.

if you want to try to make your own sofrito...you can just google "sofrito" and a few recipies come up... they're slight variations on the same thing: peppers, onions, garlic, recao or cilantro, etc

you're all making me hungry!
