Pierogies...what to do with them??
So, yes, there was a really good sale on pierogies a while back so I picked up a bunch and now I look in my freezer and there's still a whole bunch of bags of them left. We typically boil them, then put them in the toaster oven and add salt or butter.
I have already made a lasagna with them as well...
Is there anything else I can do with them???

That's exactly what I do! Even better if you serve them with some kielbasa and sauerkraut.

YES!!! and this is dinner tonight think. Yum, I can't wait. These are homemade. The bf and I attempted his family's recipe last week.

Here is my recipe for homemade pierogies.
Ingredients: 3 cups of flour 2 eggs 1/2 teaspoon of salt 1 Cup of water Pepper Margarine Large Can of Sauerkraut 1/2 large onion or 1 small onion
First, cook the sauerkraut: 1. Open the can of sauerkraut and empty it into a calendar to drain the liquid. 2. Wash the sauerkraut with cold water to get the sourness out, for about a minute. 3. Slice the onion and put that into a frying pan with the margarine. 4. Add sauerkraut to the pan with the onions and margarine. 5. Continue turning the sauerkraut in the pan, adding margarine as needed so it doesn't burn. 6. You can add pepper to the mixture, if desired. 7. Once the sauerkraut is nice and brown it is done. 8. Put this on the side to cool.
To make the dough: 1. Take 3 cups of flour, 2 eggs, half a teaspoon of salt and one cup of water and mix dough until it rolls into a ball. 2. If it's too wet, add more flour. 3. If it's too dry, add some water. 4. Roll out the dough 5. Take a large glass or cup to cut the dough (like you would with a cookie cutter) into round pieces.
Prior to adding the sauerkraut to the dough and making the actual pierogie, take a large pot of water and bring it to a boil.
Now, while the water is boiling, you will make the pierogies: 1. Take a teaspoon or tablespoon of the cooked sauerkraut mixture, and place it in the center of the dough and pinch the dough together. If the dough won't stick, stick your fingers in water and this should help. 2. Place the pierogie carefully into the pot of boiling water. I usually place it on a large serving spoon and gently place it into the pot. 3. When the pierogie floats to the top, it is done. Take it out of the pot and place it on a plate to cool off. 4. You can put multiple pieorgies into the water at the same time.
When you are ready to serve the pierogies, you brown them lightly in a frying pan with margarine.
Note: You can also substitute the sauerkraut mixture and use mashed potatoes, or even prune butter.

I fry up some bacon then remove and let cool. I saute some onions in the bacon fat and then add some butter & the pierogies. I saute until the get golden brown and remove. I then crumple the bacon and toss with the pierogies. I serve with sour cream! They are soooooo good!

Oh we tried them right after we made them - super delish!!! My dough is similiar to the one above but we did a different filling. 3lbs of farmers cheese and 1 lb of ricotta (we'll do a little less ricotta next time) with 1.5T of sugar (or to taste)

DH and I just realized we have some kielbasa in the freezer. I think we will be having that w/some homemade pierogies next Sunday.

Take it from a Russian, my favorite way to make them is to saute them with butter and onions and bacon. First you do the onions, then you add chopped up bacon. Then you take them out, cook the pierogies until they're a little brown on each side then just reheat the onions and bacon until it's warm.
I also like it with Adobo and chicken and onions, also sauted. Basically made the same way as the other recipe.
Either one you could do a side of some kind of green vegetable like brussel sprouts, broccoli, etc.
Pierogies are soooooo much better in a pan than boiled.
